Before you start

Before you begin assembling your casserole, gather all your ingredients and prep your workspace. Shred your sharp cheddar cheese from a fresh block and set it aside in a bowl. If you are using raw chicken breasts, set up a pot of water for poaching.

Lightly grease your 9x13-inch baking dish with nonstick cooking spray or a thin layer of butter, and preheat your oven to 375°F (190°C) so it is ready to go as soon as your layers are assembled.

Ingredients at a glance (3)
  • 1 1/2 lb boneless, skinless chicken breasts
  • 12 corn tortillas
  • 3 cups shredded cheddar cheese, divided

Instructions

Prep and Shred the Chicken

  1. Cook the Chicken
Place the raw chicken breasts in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer. Cook for 12 to 15 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Transfer the chicken to a cutting board and let it cool slightly.
Look for The chicken is cooked through and ready to shred.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not boil the chicken too rapidly, as a gentle simmer keeps the meat tender.
  2. Shred the Chicken
Shred the cooked chicken breasts using two forks on a clean cutting board. Ensure the chicken is shredded into bite-sized, tender pieces, which will allow it to layer evenly with the tortillas and cheese in the casserole dish.
Look for The chicken is fully shredded and uniform in size.
Tip Shredding the chicken while it is still warm makes the process much easier.

At the end of this phase, the chicken will be tender, fully cooked to a safe internal temperature of 165°F (74°C), and easily shredded into bite-sized pieces. The shredded chicken is set aside on a clean cutting board, ready to be layered with the other ingredients.

Assemble the Layers

  1. Layer the Casserole
Arrange 6 corn tortillas in an even layer at the bottom of the prepared 9x13-inch baking dish, overlapping them slightly to cover the surface. Spread half of the shredded chicken over the tortillas, then sprinkle evenly with 1 1/2 cups of the shredded cheddar cheese.
Look for The layers are flat and cover the bottom of the dish completely.
Tip Tear or cut the tortillas to fit the corners of your baking dish perfectly.

The baking dish should now be filled with the first layer of soft corn tortillas, a generous portion of tender shredded chicken, and a blanket of freshly shredded cheddar cheese. The layers should be flat, even, and ready for the final repetition.

Bake to Golden Perfection

  1. Repeat and Bake
Repeat the layers by placing the remaining 6 corn tortillas over the cheese, followed by the remaining shredded chicken. Sprinkle the final 1 1/2 cups of shredded cheddar cheese over the top. Place the baking dish in the preheated oven and bake uncovered at 375°F (190°C) for 30 minutes, or until the cheese is melted and bubbling.
Look for The cheese is melted, bubbling, and golden brown around the edges.
Tip If the top browns too quickly, cover the dish loosely with foil for the remaining bake time.
  2. Rest and Serve
Remove the casserole from the oven. Let it rest on a wire rack for 10 minutes before slicing. This resting time allows the layers to set up, making it much easier to lift clean, beautiful slices out of the dish with a spatula for serving.
Look for The casserole is set and slightly cooled for slicing.
Tip A metal spatula is the best tool for lifting clean slices without breaking the layers.

Your casserole is finished when the cheddar cheese on top is completely melted, deeply golden-brown around the edges, and bubbling vigorously. A fork inserted into the center should feel hot, and the steam rising from the dish should carry a rich, cheesy aroma.

Common mistakes

One common mistake is using flour tortillas instead of corn tortillas. Flour tortillas tend to absorb too much moisture and turn into a gummy, soggy mess during baking, whereas corn tortillas maintain their structure and offer a pleasant texture.

Another error is not letting the casserole rest after baking. If you slice into the dish immediately out of the oven, the hot layers will slide apart, and you will lose the beautiful defined layers shown in the video. A brief ten-minute rest ensures clean, presentable slices.

How to tell it’s done

The casserole is perfectly done when the cheddar cheese on top is fully melted, bubbling vigorously at the edges, and starting to develop beautiful golden-brown spots.

Because the chicken is already cooked to a safe internal temperature of 165°F (74°C) before assembly, the baking time is primarily focused on heating the dish through and melting the cheese.

To be absolutely sure, you can insert an instant-read thermometer into the center of the casserole; it should read at least 165°F (74°C) before you remove it from the oven.
