Before you start

Before starting, ensure that all ingredients are measured and ready to go. If using leftover rice, break up any large clumps with a fork to ensure it is fluffy and easy to mix. Preheat your oven broiler so that it is ready to work immediately after the assembly phase.

Have your baking dish nearby and ensure your skillet is clean. Having everything prepped in advance makes the cooking process smooth and prevents any last-minute stress while the beef is browning.

Ingredients at a glance (3)
  • 1 lb ground beef
  • 2 cups cooked white rice
  • 2 cups shredded cheddar cheese

Instructions

Browning the beef

  1. Brown the ground beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces with a wooden spoon, until browned and no longer pink. Drain any excess fat if necessary.
Look for The beef should be fully browned and sizzle in the pan.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the beef is broken into uniform pieces for even cooking.

The ground beef should be deeply browned and no longer pink. You should hear a distinct sizzling sound in the skillet, and the aroma of browned meat should be prominent. If there is excess fat in the pan, drain it carefully to prevent the final dish from becoming greasy.

Assembling the casserole

  1. Assemble the casserole
Combine the browned ground beef with the cooked white rice in a large mixing bowl. Stir until well incorporated. Transfer the mixture into a 9x13 inch baking dish and spread it into an even layer.
Look for The mixture should look consistent and well mixed before baking.
Tip Use a spatula to press the mixture gently into the corners of the dish.

The mixture of beef and rice should be uniform, with the beef distributed evenly throughout the rice. The mixture should look moist and well-combined. Ensure the top is leveled out in the baking dish so the cheese can melt uniformly when you add it in the next step.

Melting the cheese

  1. Add cheese and broil
Sprinkle the shredded cheddar cheese evenly over the top of the beef and rice mixture. Place the casserole dish under the broiler for 2 to 3 minutes, or until the cheese is melted and bubbling.
Look for Watch closely as the broiler can burn cheese very quickly.
Tip Keep the oven door slightly ajar if the broiler is very intense.

The cheese should be completely melted and show signs of bubbling across the entire surface. It should appear golden and glossy. At this point, the dish is ready to be removed from the oven and should be allowed to rest for a few minutes before serving to let the flavors settle.

Common mistakes

A common mistake is overcrowding the skillet while browning the beef, which can cause the meat to steam rather than brown. Another error is leaving the dish under the broiler for too long, which can lead to burnt cheese.

Always stay by the oven while broiling, as the transition from perfectly melted to burnt happens in seconds. Finally, ensure the beef is cooked through completely before mixing it with the rice to guarantee food safety.

How to tell it’s done

The casserole is done when the ground beef has reached an internal temperature of 160°F (71°C) and the cheese topping is completely melted and bubbling.

The edges of the casserole should look slightly toasted, indicating that the heat has penetrated through to the center of the dish.

Because the ingredients are mostly cooked before assembly, the main goal is to ensure the beef is safe to eat and the cheese is beautifully melted and hot throughout.

  • Ground meat: 160°F (71°C) in the thickest part
