Before you start

Before beginning, ensure all ingredients are at room temperature, especially the pastry dough, which is much easier to roll when not cold. Clear a large workspace and have your parchment paper and rolling pin ready.

Preheat your oven to 400°F (200°C) at least 20 minutes before you plan to bake so it reaches the correct temperature. Having everything measured and ready will make the assembly process smooth and efficient.

Ingredients at a glance (4)
  • 1 pound pastry dough, store-bought or made ahead
  • 8 oz deli ham, thinly sliced
  • 2 cups shredded mozzarella cheese
  • 2 tbsp unsalted butter, melted

Instructions

Dough Preparation

  1. Prepare the dough
Preheat the oven to 400°F (200°C). Roll out the pastry dough on a piece of parchment paper into a large rectangle, ensuring an even thickness to guarantee consistent baking across the entire surface of the pastry.
Look for dough is rolled into an even rectangle
Tip Keep the edges slightly thinner to make rolling the final log easier.

The dough should be rolled into a smooth, even rectangle on your parchment paper. It should be thin enough to cook through but thick enough to hold the weight of the ingredients without tearing.

Ensure your workspace is lightly floured if the dough feels sticky, as a smooth surface makes the final rolling step much easier to manage.

Assembly and Rolling

  1. Assemble the filling
Layer the ham slices evenly over the dough, leaving a small border around the edges. Sprinkle the mozzarella cheese generously over the ham. Carefully roll the dough into a tight log, tucking in the ends to seal the filling inside.
Look for filling is evenly distributed and log is tightly sealed
Tip Seal the seam by pinching the dough edges together firmly.

The ham should be layered consistently across the surface, followed by an even distribution of the shredded mozzarella. When rolling, keep the tension consistent to ensure a tight log. The final roll should look uniform, with the seam side facing down on the parchment paper to prevent it from opening during the baking process.

Baking and Finishing

  1. Bake and finish
Place the stromboli on a baking sheet and bake for 25 minutes until golden brown. Remove from the oven and immediately brush the top with the melted butter to add a rich, glossy finish and extra flavor to the crust.
Look for crust is deep golden brown and cheese is bubbling
Tip Allow to rest for 5 minutes before slicing to keep the cheese inside.

The crust should be a vibrant, golden brown color, and you might see small bubbles of cheese escaping from the ends. The aroma should be savory and inviting. Once brushed with butter, the surface should look slightly glossy and smell rich, indicating the butter has been absorbed by the hot, crispy exterior of the golden pastry.

Common mistakes

Avoid overstuffing the stromboli, as this can lead to the dough tearing and the cheese leaking out onto the baking sheet. Another common error is failing to seal the seams tightly; take the time to pinch the dough edges firmly to create a secure roll.

Finally, do not skip the resting time after baking. Slicing into it too early will cause the hot, melted cheese to spill out, making it difficult to serve cleanly.

How to tell it’s done

The stromboli is done when the crust is a deep, uniform golden brown color and the cheese is visibly melted and bubbling inside the center. If you press the crust lightly, it should feel firm and crisp, not soft or doughy.

Ensure the internal temperature reaches at least 165°F (74°C) to confirm the dough is cooked through. Let it rest for 5 minutes before slicing to allow the cheese to set slightly.
