Before you start

Before beginning, ensure all ingredients are measured and ready. Wash the cabbage head thoroughly and remove any damaged outer leaves.

Use a sharp chef knife to cut the cabbage into four uniform wedges, keeping the core intact so the wedges stay together during the roasting process. Preheat your oven early to ensure it reaches the target temperature before you start cooking.

Ingredients at a glance (3)
  • 1 head green cabbage, cut into 4 thick wedges
  • 1 lb ground beef
  • 2 cups shredded mozzarella cheese

Instructions

Roasting the cabbage

  1. Prepare and roast cabbage
Preheat your oven to 400°F (200°C). Arrange the four cabbage wedges in a large baking dish. Roast them in the oven for about 20 minutes until the edges start to soften and brown slightly.
Look for Cabbage should be tender and lightly browned at the edges.
Tip Cut the cabbage into even wedges to ensure uniform cooking across all pieces.

The cabbage wedges should look slightly wilted with browning on the edges.

They should smell sweet and earthy, indicating that they are tender enough to hold the weight of the beef topping without falling apart during the final assembly phase.

Browning the beef

  1. Cook the ground beef
While the cabbage roasts, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until fully browned. Ensure the internal temperature reaches at least 160°F (71°C) to be safe.
Look for Beef should be browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain excess fat from the skillet before topping the cabbage to keep the dish from becoming greasy.

The ground beef should be deeply browned and fragrant. The fat should be mostly rendered out, and the meat should have a uniform, savory aroma. Check that there are no pink spots remaining before proceeding to the topping stage of the recipe.

Melting the cheese

  1. Assemble and melt cheese
Remove the cabbage from the oven. Spoon the cooked ground beef evenly over the top of each cabbage wedge. Cover generously with the shredded mozzarella cheese. Place the dish back under the broiler for 3 to 5 minutes until the cheese is bubbling, golden, and melted. Let rest for 5 minutes before serving.
Look for Cheese should be golden brown and bubbling with a classic pull.
Tip Watch the broiler closely as cheese can burn in seconds.

The dish should be bubbling with a golden, slightly browned cheese crust. When lifted with a spatula, the cheese should pull away in long, elastic strands, confirming that it has reached the ideal melting point for the best texture.

Common mistakes

Avoid overcrowding the baking dish, as this will cause the cabbage to steam rather than roast, leading to a mushy texture.

Additionally, do not skip the browning step for the beef, as this is where the majority of the flavor is developed. Finally, never walk away from the broiler, as cheese can go from perfectly melted to burnt in seconds.

How to tell it’s done

The dish is done when the cabbage is fork-tender and the cheese topping is golden and bubbling.

The ground beef must be cooked through to an internal temperature of at least 160°F (71°C) during the skillet-browning phase. The final broiling step is for texture and color, so monitor it closely to prevent burning.

  • Ground meat: 160°F (71°C) in the thickest part
