Before you start

Before beginning, preheat the oven to 375°F (190°C) to ensure it is ready when the enchiladas are assembled. Gather all ingredients and have the baking dish nearby. If the mozzarella is not pre-shredded, grate it yourself for better melting qualities.

Ensure the work surface is clean and that a reliable spatula is available for transferring the beef and serving the finished dish. Having all components measured out in advance makes the assembly process smooth and efficient.

Ingredients at a glance (5)
  • 1 lb ground beef
  • 2 cups marinara sauce
  • 8 flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices

Instructions

Browning the beef

  1. Prepare the beef filling
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and no longer pink. Ensure the internal temperature reaches 160°F (71°C) to confirm it is fully cooked. Drain excess fat if necessary.
Look for The beef should be browned and crumbly.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Season the beef with Italian herbs like oregano or garlic powder for extra flavor.

The ground beef should be deeply browned and cooked through, with no pink remaining. It should be broken into small, uniform pieces to ensure even distribution inside the tortillas.

The skillet should be mostly dry after the fat has been drained from the meat before proceeding to assembly.

Assembling the rolls

  1. Assemble the enchiladas
Spread a thin layer of marinara sauce on the bottom of the baking dish. Spoon the cooked ground beef into the center of each flour tortilla, roll them up tightly, and place them seam-side down in the dish. Pour the remaining marinara sauce evenly over the top of the rolled enchiladas.
Look for Ensure the enchiladas are packed snugly.
Tip Use a spoon to tuck the edges of the tortillas tightly.

The filled tortillas should be tightly rolled and arranged closely together in the baking dish. The marinara sauce should be spread evenly over the tops of the rolls, ensuring the edges are lightly coated to prevent them from drying out during the baking phase.

Baking until bubbly

  1. Bake and serve
Top the enchiladas with the shredded mozzarella cheese and pepperoni slices. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, or until the cheese is melted and bubbling. Remove from the oven and let rest for 5 minutes before serving.
Look for The cheese should be golden and bubbly.
Tip Broil for the last 2 minutes if a crispier cheese topping is preferred.

The mozzarella should be completely melted and show a slight golden color in some areas. The pepperoni slices should be heated through and slightly curled. The entire dish should be steaming and fragrant, indicating it is ready to be removed from the oven.

Common mistakes

Avoid overfilling the tortillas, as this can cause them to tear or burst during the baking process. Ensure the tortillas are placed seam-side down to keep them closed.

Another common mistake is adding too much sauce at the bottom, which can make the rolls mushy; use just enough to prevent sticking. Finally, do not skip the resting period, as the sauce needs time to stabilize, ensuring the cheese pull remains intact when serving the portions.

How to tell it’s done

The dish is done when the cheese is fully melted and the sauce around the edges is bubbling. The internal temperature of the ground beef should have reached 160°F (71°C) during the browning phase.

The pepperoni should be slightly crisped, and the entire dish should be hot throughout. Let the dish rest for at least 5 minutes before serving to allow the sauce to set, which makes it easier to lift individual portions without them falling apart.

  • Ground meat: 160°F (71°C) in the thickest part
