Before you start

Before beginning, ensure all ingredients are measured and ready. Scrub the potatoes thoroughly under cold running water to remove any dirt. Using a sharp knife or a mandoline, slice the potatoes into thin, uniform rounds to guarantee they cook through properly.

Brown the ground beef in a skillet until fully cooked, ensuring the meat is broken into small, even pieces. Preheat the oven to 375°F (190°C) so it is ready for the assembly phase, and have the cheese shredded and set aside for the final topping.

Ingredients at a glance (3)
  • 1 lb ground beef
  • 2 lbs potatoes, thinly sliced
  • 2 cups cheddar cheese, shredded

Instructions

Browning the Meat

  1. Prepare and Brown the Beef
Preheat the oven to 375°F (190°C). In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked through, reaching an internal temperature of 160°F (71°C). Drain any excess fat from the skillet.
Look for The meat should be browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Break the beef into small crumbles with a spatula for even texture.

The ground beef should be deeply browned and fragrant. Ensure all pink color is gone and the meat is broken into small, uniform crumbles. Drain any excess fat carefully before moving to the assembly stage to maintain a clean flavor profile.

Layering the Dish

  1. Assemble the Layers
Arrange a layer of thinly sliced potatoes at the bottom of the casserole dish. Add a layer of the cooked ground beef on top. Repeat the layers until all ingredients are used, finishing with a final layer of potatoes.
Look for Ensure the layers are distributed evenly throughout the dish.
Tip Slicing the potatoes thinly ensures they cook through at the same time as the meat.

The potatoes and beef should be arranged in tight, even layers to fill the casserole dish properly. Ensure there are no large gaps between the potato slices, as this helps the casserole maintain its structure and ensures that every serving contains a good balance of meat and potatoes.

Final Baking

  1. Bake and Serve
Cover the dish with foil and bake for 30 minutes. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake for an additional 15 minutes until the cheese is melted and bubbly. Let the dish rest for 10 minutes before serving.
Look for The cheese should be golden and bubbling.
Tip Wait for the rest period to allow the sauce to set.

The cheese should be completely melted and show signs of bubbling along the edges of the dish. The top should be a light golden brown color.

If the cheese is not browning sufficiently, you may briefly set the oven to broil for the final minute, keeping a close watch to prevent burning.

Common mistakes

Avoid slicing the potatoes too thickly, as this will prevent them from cooking through within the allotted baking time. Ensure the ground beef is properly drained of excess fat before layering, as too much oil can result in a greasy final dish.

Do not skip the resting period, as this allows the casserole to set, making it much easier to portion and serve without the layers falling apart on the plate.

How to tell it’s done

The casserole is done when the potatoes are fork-tender and the cheese topping is golden brown and bubbling. To check for doneness, insert a knife or fork into the center of the dish; it should slide through the potato layers with minimal resistance.

The ground beef, having been browned beforehand, will be fully cooked and safe to eat, reaching the required internal temperature during the initial browning step.

  • Ground meat: 160°F (71°C) in the thickest part
