Tips for success

To achieve the ultimate glossy pasta sauce, reserve about half a cup of the pasta cooking water before draining the spaghetti.

If your cream and cheddar sauce seems a bit too thick or starts to tighten up as you toss it, splash in a tablespoon or two of the reserved water. The starch in the water helps bind the fat and liquid, keeping the sauce velvety and smooth.

Let the finished dish rest for about five minutes after removing it from the heat before serving. This brief resting period allows the melted cheese blanket to set slightly and the pasta sauce to thicken up.

If you dive in immediately, the sauce may run to the bottom of the plate, but a short rest ensures every portion stays perfectly structured and saucy.

Variations

  • Spicy Garlic Beef: Add half a teaspoon of red pepper flakes to the garlic butter before browning the beef for a subtle heat.
  • Herb Cheddar Twist: Stir a teaspoon of dried Italian seasoning into the heavy cream for an aromatic herb flavor.

Storage and make-ahead

Fridge
Refrigerate in an airtight container within two hours of cooking; keeps well for up to 3 to 4 days.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw completely in the refrigerator before reheating.
Reheat
Reheat in a 350°F (175°C) oven covered with foil for 15 minutes, or microwave individual portions with a splash of milk.

Store any leftover cheesy beef spaghetti in an airtight container in the refrigerator within two hours of cooking. Do not let the cooked pasta sit out at room temperature for longer than this to prevent bacterial growth. Properly stored, the leftovers will keep well and remain delicious for up to three to four days.

You can easily assemble this dish ahead of time. Cook the pasta, toss it with the cream and cheese, and top it with the cooked beef and shredded cheese in a baking dish.

Cover the dish tightly with foil and store it in the refrigerator for up to twenty-four hours. When ready to serve, bake at 375°F (190°C) for twenty minutes until heated through and bubbly.

Serving ideas

Serve this rich, comforting spaghetti hot, straight from the baking dish to show off the spectacular melted cheese pull.

It pairs beautifully with a crisp, simple green salad dressed with a sharp vinaigrette to cut through the decadent cream and cheese. A side of warm garlic bread is also excellent for soaking up any extra velvety sauce left on the plate.

For a touch of freshness, garnish the top with a sprinkle of finely chopped fresh parsley or a few torn basil leaves just before serving. This adds a vibrant pop of color and a clean, herbaceous note that balances the deep, savory flavors of the garlic butter beef and rich cheddar sauce.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, assemble the dish completely in a baking dish, cover tightly with foil, and refrigerate for up to twenty-four hours. Bake at 375°F (190°C) for twenty minutes until hot and bubbly.
How to prevent the cheese sauce from clumping?
Use freshly grated cheese instead of pre-packaged shredded cheese, and toss the pasta over low heat. Pre-shredded cheeses contain starches that prevent smooth melting.
Can ground turkey be used instead of ground beef?
Absolutely. Ground turkey is an excellent substitute, but ensure it is cooked to a safe internal temperature of 165°F (74°C) instead of 160°F (71°C).

Cheesy Garlic Beef Spaghetti

A tall, steaming mound of saucy garlic spaghetti topped with seasoned ground beef and a bubbly

Ingredients

  • 8 oz dry spaghetti
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 cup heavy cream
  • 1 1/2 cups cheddar cheese, shredded and divided
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Bring a large pot of water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Drain the pasta, reserving half a cup of pasta water, and set the noodles aside. Do not rinse the cooked pasta.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for one minute until fragrant. Add the ground beef and cook, breaking it up with a spoon, until fully browned and cooked to an internal temperature of 160°F (71°C). Remove the beef from the skillet and set aside.
  3. In the same pot used for the pasta, combine the hot spaghetti, heavy cream, and one cup of the shredded cheddar cheese. Toss smoothly over low heat until the cheese melts completely and coats the pasta in a velvety, glossy sauce. If the sauce is too thick, splash in a little reserved pasta water.
  4. Transfer the cheesy spaghetti to a baking dish. Top the pasta with the seasoned garlic beef, then scatter the remaining half cup of cheddar cheese and the mozzarella cheese evenly over the top. Place under a preheated broiler for three to five minutes until the cheese is completely melted, bubbly, and golden brown.
