Before you start

Before beginning the assembly, ensure all ingredients are ready for use. Have the chicken shredded and set aside, and ensure the black beans are thoroughly rinsed and drained to prevent excess moisture in the casserole.

Preheat the oven to the specified temperature so it is ready once the assembly is complete. Preparing the workspace by clearing the counter and having the baking dish and large mixing bowl within reach will make the process flow smoothly.

Ingredients at a glance (5)
  • 1 lb rotini pasta
  • 2 cups shredded chicken
  • 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheese

Instructions

Pasta and base preparation

  1. Prepare the pasta and base
Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package directions until al dente. If handling raw chicken, pat it dry with paper towels to avoid splashing bacteria around the sink; clean the sink, colander, and surfaces immediately after. Drain the pasta using a colander and transfer it to a large mixing bowl. Add the shredded chicken, rinsed black beans, and corn kernels to the cooked pasta, stirring gently until all ingredients are evenly distributed throughout the mixture.
Look for pasta is al dente
Tip ensure the pasta is not overcooked as it will soften further in the oven

The pasta should be cooked to al dente, and the mixture in the mixing bowl should look uniform, with the chicken, beans, and corn evenly distributed. The mixture should not be overly wet or dry before it is transferred to the baking dish for the next stage of the process.

Assembly and topping

  1. Assemble the casserole
Preheat the oven to 375°F (190°C). Transfer the pasta and chicken mixture into a 9x13 inch baking dish, spreading it out into an even layer. Top the mixture generously with the shredded cheese, ensuring the surface is well covered to create a uniform, golden, and melted crust during the baking process.
Look for cheese is evenly spread over the top
Tip use a mixture of cheeses like cheddar and monterey jack for better flavor

The casserole should be spread evenly across the baking dish to ensure consistent cooking. The layer of cheese should cover the entire surface, reaching the edges of the dish. This ensures every portion gets a generous amount of melted cheese once the dish comes out of the oven.

Baking and final rest

  1. Bake and serve
Place the baking dish into the preheated oven and bake for approximately 20 to 25 minutes, or until the cheese is bubbling and slightly browned. Ensure the internal temperature of the chicken reaches 165°F (74°C). Remove from the oven and allow to rest for at least 5 minutes before serving to ensure the cheese sets slightly.
Look for cheese is golden and bubbly
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip do not skip the resting time as it makes serving much cleaner

The surface of the cheese should be golden and bubbling. After removing it from the oven, the casserole must rest for at least 5 minutes.

This cooling period is critical as it allows the internal moisture to stabilize, resulting in a cleaner portioning when serving the meal to guests or family.

Common mistakes

A common mistake is overcooking the pasta before it hits the oven, which can lead to a mushy texture in the final dish. Always stop boiling the pasta when it is still firm to the bite.

Another error is failing to drain the black beans properly, which introduces too much liquid and can result in a soupy casserole. Ensure the oven is fully preheated to avoid uneven melting.

How to tell it’s done

The casserole is ready when the cheese on top is fully melted, bubbling, and exhibits a light golden-brown color. The edges of the pasta should appear slightly firm, and the internal temperature of the chicken must reach 165°F (74°C) to ensure it is safe to consume.

The dish should feel hot throughout, and the cheese should provide a satisfying, stringy pull when lifted with a spatula.

  • Poultry: 165°F (74°C) in the thickest part
