Tips for success
For the best flavor, use high-quality shredded beef barbacoa. If making homemade, season generously with chipotle, cumin, and garlic.
The Spanish rice should be slightly undercooked if making fresh, as it will continue to cook in the slow cooker. To prevent the casserole from becoming too saucy, drain the beans and corn well.
The cheese blend can be adjusted to taste—add more cheddar for sharpness or more Oaxaca for stretch. For a spicier dish, use hot enchilada sauce or add chopped jalapeños. The casserole is versatile; try adding black beans instead of pinto, or use fire-roasted corn for extra smokiness.
Variations
- Chicken Barbacoa Casserole: Substitute the beef with shredded chicken cooked with chipotle peppers and spices. Use the same layering and cooking method. The chicken will absorb the enchilada sauce and cheese flavors beautifully.
- Vegetarian Burrito Casserole: Replace the beef with a plant-based meat substitute or extra beans and roasted sweet potatoes. Use vegetarian enchilada sauce and skip the beef altogether. The rice and beans will provide plenty of texture and flavor.
- Spicy Green Chile Version: Use green enchilada sauce instead of red, and add chopped green chiles or jalapeños to the layers. Top with pepper jack cheese for an extra kick. The green sauce adds a tangy, slightly smoky flavor.
- Breakfast Burrito Casserole: Layer the same ingredients but add scrambled eggs and use breakfast sausage instead of beef. Cook on low for 2 hours, then top with cheese and serve with salsa and avocado. This makes a hearty brunch dish.

This casserole can be assembled up to 24 hours in advance. Layer all ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 3 hours, adding 15–20 minutes to the cooking time to account for the cold start. The toppings can be prepared ahead and stored separately.
Serving ideas
Serve the casserole straight from the slow cooker to keep it warm. Scoop generous portions into wide bowls, allowing the layers to show.
Top with a dollop of guacamole, a drizzle of sour cream crema, a spoonful of pico de gallo, and a sprinkle of fresh cilantro. A lime wedge on the side adds a bright, citrusy finish that cuts through the richness.
This dish is a complete meal on its own, but it also pairs well with a simple side salad or tortilla chips.
For a more substantial spread, serve with warm flour tortillas or tortilla chips for scooping. The casserole feeds a crowd, making it ideal for potlucks, family dinners, or casual gatherings.

Crockpot Beef Barbacoa Burrito Casserole

Ingredients
- 2 lb shredded chipotle beef barbacoa
- 2 cups cooked Spanish rice
- 1 can (15 oz) pinto beans, drained and rinsed
- 16 oz red enchilada sauce
- 1 cup corn kernels (frozen or canned, drained)
- 3 cups Oaxaca-cheddar blend, shredded
- Guacamole, for serving
- Sour cream crema, for serving
- Pico de gallo, for serving
- Fresh cilantro leaves, for serving
- Lime wedges, for serving
Instructions
- In a 6-quart slow cooker, spread the shredded chipotle beef barbacoa evenly over the bottom. Top with the cooked Spanish rice, then the drained pinto beans, then the corn kernels. Pour the red enchilada sauce over the top, using a spoon to gently distribute it without stirring the layers.
- Sprinkle the shredded Oaxaca-cheddar blend evenly over the top of the casserole, covering the sauce completely. The cheese will melt and form a bubbling blanket as the casserole cooks.
- Cover the slow cooker and cook on LOW for 3 hours, until the casserole is bubbling around the edges and the cheese is fully melted and slightly golden. The beef should be heated through and the rice tender. Let it rest for 3 minutes before slicing.
- Use an instant-read thermometer to check that the beef reaches a safe internal temperature of 145°F (63°C). If not, continue cooking for another 15–30 minutes and check again. The casserole should be hot and bubbling throughout. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the casserole rest for 5 minutes. Scoop generous portions into wide bowls, then top with guacamole, sour cream crema, pico de gallo, fresh cilantro, and a lime wedge for squeezing.
