Tips for success
For extra crispiness, double-fry the taquitos: fry for 2 minutes, let cool for 2 minutes, then fry again for 1 to 2 minutes until deeply golden.
This removes excess moisture and creates an even crunchier shell. Use a thermometer to maintain oil temperature at 350°F (175°C) for consistent results.
To keep taquitos warm while frying batches, place them on a wire rack in a 200°F (95°C) oven. This prevents them from becoming soggy. If making ahead, fry and then reheat in an air fryer or oven at 400°F (200°C) for 5 minutes to restore crispness.
Variations
- Chicken Taquitos: Replace the ground beef with 2 cups of shredded cooked chicken. Season with the same spices and omit the tomato paste if desired. Cook the chicken with the onions and garlic until heated through.
- Spicy Chorizo Taquitos: Use fresh Mexican chorizo instead of ground beef. Cook it with the onions and garlic until fully cooked, then add the spices. Chorizo is already seasoned, so adjust salt accordingly.
- Vegetarian Black Bean Taquitos: Swap the beef for 1 can of black beans, drained and rinsed. Mash lightly with a fork and cook with the onions, garlic, and spices until thick. Add corn kernels for extra texture.
- Baked Taquitos: For a lighter version, brush the rolled taquitos with oil and bake at 425°F (220°C) for 15-20 minutes, turning halfway, until golden and crisp. They won't be as shatteringly crunchy but still delicious.
Storage and make-ahead
- Fridge
- Store leftover taquitos in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to restore crispness.
- Freezer
- Freeze rolled, unfried taquitos in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Fry from frozen, adding 1-2 minutes.
- Reheat
- Reheat fried taquitos in a 400°F (200°C) oven for 5-7 minutes or in an air fryer at 375°F (190°C) for 3-4 minutes until hot and crisp.

Avoid microwaving, as it makes them soggy. The crema can be refrigerated separately for up to 3 days.
The beef filling can be prepared up to 2 days in advance and kept refrigerated. Rolled, unfried taquitos can be stored in the refrigerator for up to 24 hours; fry them just before serving.
For longer storage, freeze the rolled taquitos on a baking sheet, then transfer to a freezer bag for up to 2 months. Fry from frozen, adding 1 to 2 minutes to the cooking time.
Serving ideas
Serve these taquitos as a main dish with Mexican rice, refried beans, or a simple salad. They also make excellent party appetizers, cut in half and arranged on a platter with the crema for dipping. For a fun twist, offer additional toppings like salsa, guacamole, or pickled jalapeños.
The cilantro lime crema is the perfect accompaniment, but you can also serve with salsa verde, pico de gallo, or a squeeze of fresh lime.
For a heartier meal, top the taquitos with shredded lettuce, diced tomatoes, and crumbled queso fresco. They are best enjoyed immediately after frying, while still hot and crisp.

Cheesy Crispy Beef Taquitos: Easy Restaurant-Style Roll-Ups

Ingredients
- 1 lb ground beef
- 1/2 cup finely diced onion
- 2 cloves minced garlic
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp dried oregano
- 12 yellow corn tortillas (6-inch)
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup vegetable oil, for frying
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tbsp fresh lime juice
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 5 minutes. Add the onion and garlic; cook until softened, about 2 minutes. Stir in the tomato paste, cumin, chili powder, and oregano. Cook for 1 to 2 minutes until the mixture is thick and fragrant. Season with salt to taste. Transfer to a bowl and let cool slightly.
- Stack the corn tortillas and wrap them in damp paper towels. Microwave for 30 to 45 seconds until pliable. Alternatively, heat them one by one in a dry skillet over medium heat for about 15 seconds per side.
- Lay a warm tortilla on a flat surface. Spoon about 2 tablespoons of the beef mixture down the center. Top with about 2 tablespoons of shredded Monterey Jack cheese. Roll the tortilla tightly into a snug cigar shape, securing with a toothpick if needed. Repeat with the remaining tortillas and filling.
- Pour the vegetable oil into a medium skillet to a depth of about 1/4 inch. Heat over medium-high heat until shimmering, about 2 minutes. To test, dip the edge of a tortilla in the oil; it should sizzle immediately.
- Carefully place the taquitos seam-side down in the hot oil, working in batches to avoid crowding. Fry for about 3 minutes total, turning occasionally, until golden brown and shatteringly crisp on all sides. Use tongs to transfer to a paper towel-lined plate to drain.
- In a small bowl, stir together the sour cream, cilantro, and lime juice until smooth. Season with a pinch of salt if desired.
