Before you start

Before starting, measure all ingredients and set them out. Ensure the water for the dough is warm but not hot (about 110°F/43°C) to activate the yeast. Dice the chicken, mince the garlic, and chop the onion and bell pepper.

Shred the mozzarella if not pre-shredded. Have a 9-inch round baking dish ready, greased with butter or oil. Clear a work surface for kneading and shaping the dough.

Ingredients at a glance (14)
  • 2 1/2 cups all-purpose flour
  • 1 tbsp active dry yeast
  • 1 cup warm water
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 3 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 cups shredded mozzarella cheese

Instructions

Rise and Shape

  1. Make the Dough
In a large bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the top and let stand for 5 minutes until foamy. Add the flour, salt, and olive oil. Stir until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour, or until doubled in size.
Look for The dough should be soft, smooth, and slightly sticky but hold together when shaped.
Tip If the dough is too sticky, add a little more flour, a tablespoon at a time.
  2. Shape the Bread Pot
After the dough has risen, punch it down and divide it into two pieces: one slightly larger for the base, one smaller for the lid. Roll the larger piece into a round and press it into a greased 9-inch baking dish, building up the sides to form a bowl shape. Shape the smaller piece into a round disc for the lid, and form a small knob on top using a scrap of dough. Cover and let rest while preparing the filling.
Look for The dough should hold a bowl shape without collapsing, with a thick rim around the edge.
Tip Keep the dough covered with a towel so it doesn't dry out while shaping.

The dough should have doubled in size, feeling airy and light. When you press a finger into it, the indentation should remain. The shaped bowl should have smooth, even sides and a neat rim. The lid should be a round disc with a small knob. At this point, the dough is ready to hold the filling.

Sizzling Filling

  1. Cook the Chicken and Peppers
Heat a large skillet over medium-high heat and add a drizzle of olive oil. Add the diced chicken breast and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Add the garlic, red bell pepper, and onion. Cook for another 3-4 minutes until the vegetables soften. Stir in the tomato paste, cumin, and oregano. Cook for 2 minutes until the mixture is thick and saucy.
Look for The chicken is golden brown and the vegetables are tender, with a thick, aromatic sauce coating everything.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Make sure the chicken reaches 165°F (74°C) before moving on.
  2. Fill the Bread Pot
Spoon the chicken and pepper mixture into the prepared dough bowl, spreading it evenly. Top with the shredded mozzarella cheese, mounding it generously.
Look for The filling should be level with the top of the dough, and the cheese should cover the filling completely.
Tip Do not overfill—leave a little room for the cheese to bubble without spilling over.

The chicken should be browned and cooked through, with no pink remaining. The vegetables should be soft and fragrant, and the sauce should be thick and clingy.

The filling should smell savory with hints of garlic and oregano. Taste and adjust seasoning if needed, then spoon it into the dough bowl.

Bake and Serve

  1. Bake the Casserole
Preheat the oven to 400°F (200°C). Place the filled bread pot in the oven and bake for 20-25 minutes, until the cheese is bubbling and golden brown and the crust is deep golden. If the crust browns too quickly, tent with foil.
Look for The cheese should be bubbly and lightly browned, and the dough should be golden and crisp around the edges.
Tip Place the baking dish on a rimmed baking sheet to catch any drips.
  2. Top with the Lid and Serve
Remove the bread pot from the oven and let it cool for 5 minutes. Place the dough lid on top, pressing gently to secure. Serve warm, tearing into the bread to scoop up the cheesy filling.
Look for The lid should sit snugly on top, and the cheese should stretch when pulled.
Tip Let the dish rest briefly so the filling sets slightly and is easier to serve.

The cheese should be fully melted and bubbly, with golden spots on top. The crust should be deep brown and crisp to the touch. When you tap the bread, it should sound hollow. The lid should be golden and firm. Let it rest briefly, then serve hot for the best stretchy cheese pull.

Common mistakes

Avoid overworking the dough, which can make it tough—knead just until smooth and elastic. Don’t let the dough rise in a drafty area; a warm spot helps it double quickly.

When shaping the bowl, make sure the sides are thick enough to hold the filling without tearing. Also, don’t overfill the pot; leave a little room for the cheese to bubble without spilling over. If the crust browns too fast, tent with foil.

How to tell it’s done

The casserole is done when the crust is deep golden brown and the cheese is bubbling and browned in spots. Insert an instant-read thermometer into the center of the filling; it should read at least 165°F (74°C) for the chicken.

Let the dish rest for 5 minutes before serving to allow the cheese to set slightly and the bread to firm up. The lid should be golden and firm to the touch.

  • Poultry: 165°F (74°C) in the thickest part
