Before you start

Before beginning this recipe, ensure all ingredients are measured and ready to go. Preheat the oven to 375°F (190°C) so that it is at the correct temperature when the dish is ready to bake. Cut the chicken breast into uniform 1-inch pieces to ensure they cook evenly alongside the rice.

Have a clean 9x13 inch baking dish on hand. If using fresh parsley, wash and chop it finely so it is ready to sprinkle over the finished casserole immediately after it comes out of the oven.

Ingredients at a glance (5)
  • 1.5 lb chicken breast, cut into 1-inch cubes
  • 1.5 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 2 cups shredded cheddar cheese
  • fresh parsley, chopped, for serving

Instructions

Assembling the Base

  1. Prepare the Base
Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, combine the raw rice and chicken broth. Add the cubed chicken pieces, ensuring they are evenly distributed among the rice, and stir gently to combine everything thoroughly before covering the dish tightly with aluminum foil.
Look for The mixture should be evenly spread in the dish.
Tip Ensure the rice is fully submerged in the broth to cook evenly.

The rice and chicken should be well-distributed in the baking dish, fully submerged in the broth. The foil cover must be tightly sealed to create a secure environment for steaming. Check that the oven is at the correct temperature before placing the dish inside to ensure consistent cooking throughout the entire process.

Baking the Casserole

  1. Bake the Casserole
Place the covered baking dish in the preheated oven and bake for 35 minutes. Carefully remove the foil and continue baking for an additional 10 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the rice is tender and has absorbed most of the liquid.
Look for The chicken is cooked through and the rice is fluffy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the rice texture by tasting a small amount from the center.

At the 35-minute mark, the rice should be mostly cooked and the chicken should be firming up. After removing the foil for the final 10 minutes, the liquid should continue to reduce.

The chicken must reach an internal temperature of 165°F (74°C) to be safe for consumption. If the dish appears too dry, add a small splash of broth.

Adding the Cheese Finish

  1. Add Cheese and Finish
Remove the dish from the oven and sprinkle the shredded cheddar cheese evenly over the top of the hot casserole. Return it to the oven for 3 to 5 minutes until the cheese is melted and bubbling. Remove from the oven, garnish with fresh chopped parsley, and let it rest for 5 minutes before serving.
Look for The cheese is melted and slightly golden.
Tip Do not overcook the cheese, as it can become oily.

The cheese should be spread in an even layer to ensure every portion gets a generous topping. Once it returns to the oven, watch closely to ensure it only melts and bubbles without burning. The final garnish of fresh parsley should add a pop of color and a light, herbal aroma to the finished, steaming dish.

Common mistakes

A common mistake is failing to seal the foil tightly, which allows steam to escape and results in undercooked, crunchy rice. Always ensure the edges are crimped firmly against the sides of the baking dish.

Another error is using the wrong type of rice; quick-cooking or instant rice will turn into mush, while arborio rice may become too starchy. Finally, avoid over-browning the cheese. It should be melted and soft; if left in the oven too long, the fat will separate from the protein, making the cheese layer oily and tough.

How to tell it’s done

The casserole is done when the rice is tender and the chicken has reached an internal temperature of 165°F (74°C). The liquid should be mostly absorbed, leaving the rice creamy and the chicken moist. Use a meat thermometer inserted into the thickest piece of chicken to verify the temperature.

The cheese should be completely melted and bubbling across the surface. If the cheese is not melted enough, place the dish back in the oven for a minute or two until it reaches the desired consistency.

  • Poultry: 165°F (74°C) in the thickest part
