Tips for success

For the best cheese pull, use fresh mozzarella that you shred yourself. It melts more smoothly and stretches beautifully.

If you want a crispier top, you can switch the oven to broil for the last 1-2 minutes, but watch it closely to avoid burning. Letting the bread rest for a few minutes after baking makes it easier to slice and helps the cheese set slightly.

To make this recipe your own, try adding sliced mushrooms, bell peppers, or even a drizzle of hot honey before serving.

You can also swap the chicken for cooked Italian sausage or leave it out for a vegetarian version—just increase the cheese slightly. If you have leftover Alfredo sauce, it’s great tossed with pasta or used as a dipping sauce for the bread.

Variations

  • Spicy Chicken Alfredo Bread: Add 1/2 teaspoon of red pepper flakes to the spice rub and use pepper jack cheese instead of mozzarella for a kick. Drizzle with sriracha before serving.
  • BBQ Chicken Alfredo Bread: Swap the smoked paprika for barbecue rub, and after baking, drizzle with barbecue sauce and sprinkle with chopped cilantro. Use a smoky cheddar in place of some mozzarella.
  • Vegetarian Mushroom Alfredo Bread: Omit the chicken and sauté 8 oz sliced mushrooms in the clarified butter until golden. Layer the mushrooms over the Alfredo sauce, then top with mozzarella and bake as directed.
  • Caprese-Style Alfredo Bread: After baking, top the bread with fresh tomato slices, basil leaves, and a drizzle of balsamic glaze. Add a sprinkle of Parmesan for extra flavor.

Store leftover chicken Alfredo garlic bread in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for about 10 minutes, or until warmed through and the cheese is melted again. Avoid microwaving, as it can make the bread soggy.

You can assemble the bread up to 2 hours ahead and keep it covered in the refrigerator. When ready to bake, add a few extra minutes to the cooking time since the bread will be cold. You can also cook the chicken ahead and slice it, then assemble and bake when needed.

Serving ideas

Serve this garlic bread as a main dish with a simple green salad on the side. It also works beautifully as a party appetizer—cut it into smaller pieces and arrange on a platter.

The cheese pull is the star, so present it whole on a cutting board and let everyone tear off their own piece.

For a complete meal, pair it with a bowl of tomato soup or a light Caesar salad. If you’re serving it for game day, set out extra Alfredo sauce for dipping.

This bread is best enjoyed warm, right out of the oven, when the cheese is at its most stretchy and the crust is at its crispiest.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, the bread can be assembled up to 2 hours ahead and kept covered in the refrigerator. When ready to bake, add a few extra minutes to the cooking time since the bread will be cold. You can also cook the chicken ahead and slice it, then assemble and bake when needed.
What is the best way to reheat leftovers?
Reheat leftover slices in a toaster oven or regular oven at 350°F for about 10 minutes. This helps restore the crispness of the bread and melts the cheese. Avoid microwaving, as it can make the bread soggy and chewy.
Can this be frozen?
Yes, wrap the cooled, unsliced bread tightly in aluminum foil and freeze for up to 2 months. Thaw overnight in the refrigerator, then reheat in a 350°F oven until hot and bubbly. The texture may be slightly softer after freezing, but it will still be delicious.
Why is your bread soggy?
Sogginess can happen if too much sauce is used or if the bread is not sturdy enough. Use a crusty Italian loaf and avoid over-saturating with Alfredo sauce. Also, make sure to bake the bread long enough so the butter and sauce absorb into the crumb and the edges crisp up.
Can you use pre-shredded mozzarella?
Pre-shredded mozzarella contains anti-caking agents that can affect melting. For the best stretch and creamy texture, shred mozzarella from a block yourself. If you use pre-shredded, it will still work, but the cheese pull may be less dramatic.

Cheesy chicken Alfredo garlic bread on a baking sheet, with melted mozzarella stretching as a slice is pulled away.

Ingredients

  • 1 loaf Italian bread (about 12 inches long)
  • 1 lb boneless, skinless chicken breast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp clarified butter
  • 4 tbsp unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 cup Alfredo sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Place the chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the spice mixture all over both sides of the chicken. Heat the clarified butter in a large skillet over medium-high heat. Add the chicken and sear for 4-5 minutes per side, until golden brown and cooked through. Transfer to a plate and let rest for 5 minutes before slicing.
  2. In a small bowl, combine the softened butter, minced garlic, and chopped parsley. Split the Italian loaf in half lengthwise. Spread the garlic butter evenly over the cut sides of both halves. Place the halves on a baking sheet, cut side up. Spread the Alfredo sauce over the butter, dividing evenly. Slice the rested chicken into thin strips and arrange over the sauce. Sprinkle the shredded mozzarella over the top.
  3. Heat the oven to 350°F (175°C). Bake the assembled bread for 20 minutes, until the cheese is melted and bubbly and the edges of the bread are golden brown. Remove from the oven and let cool for 2-3 minutes. Slice into portions and serve warm, pulling apart the cheesy pieces.
