Before you start

Before beginning, ensure all ingredients are gathered and measured. Preheat the oven to 400°F (200°C) so it is ready for the cabbage. Prepare a large, rimmed baking sheet with a piece of parchment paper to prevent sticking and make cleanup easier.

Keep the meat refrigerated until the moment it is needed for shaping into patties. Wash the cabbage head thoroughly under cold running water and pat it dry with paper towels to ensure it roasts properly rather than steaming too much.

Ingredients at a glance (5)
  • 1 head green cabbage, sliced into 1-inch thick steaks
  • 1 lb ground beef
  • 1 tbsp Italian seasoning
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

Cabbage Preparation

  1. Prepare the Cabbage and Beef
Preheat the oven to 400°F (200°C). Slice the head of cabbage into 1-inch thick rounds and place them on a large baking sheet. In a medium bowl, mix the ground beef with Italian seasoning until well combined. Form the seasoned beef into four patties roughly the size of the cabbage steaks.
Look for The beef should be evenly seasoned and patties shaped to fit the cabbage slices.
Tip Ensure the cabbage steaks are cut uniformly to guarantee even cooking across all portions.

The cabbage is sliced into uniform, thick rounds and the seasoned beef patties are shaped and ready for the oven. Everything is arranged on the baking sheet with enough space for even heat distribution.

Baking the Steaks

  1. Assemble and Bake
Place one beef patty on top of each cabbage steak. Bake in the preheated oven for 25 to 30 minutes. Remove the sheet from the oven and spoon marinara sauce over each beef patty, then sprinkle generously with shredded mozzarella cheese. Return to the oven and bake for an additional 10 minutes until the cheese is melted and bubbling.
Look for The beef is fully cooked and the cheese is melted and lightly browned in spots.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Check the internal temperature of the beef to ensure it reaches at least 160°F (71°C) before adding the sauce.

The cabbage is softened and the beef is browned. The marinara and cheese have been added, and the dish is back in the oven until the cheese is perfectly melted and aromatic.

Resting and Serving

  1. Rest and Serve
Remove the baking sheet from the oven and allow the steaks to rest for 5 minutes. This ensures the juices redistribute through the beef and the cabbage maintains its structure while serving. Use a metal spatula to carefully transfer each portion to a plate and serve warm.
Look for The steaks are firm enough to move with a spatula without falling apart.
Tip Resting is crucial for the best texture, as it allows the heat to stabilize throughout the thick patties.

The steaks have rested for five minutes, allowing the internal juices to settle. The cheese is stable, and the cabbage steaks are ready to be lifted carefully onto plates for immediate serving.

Common mistakes

A common mistake is slicing the cabbage too thin, which causes it to turn to mush before the beef is cooked through; keep the slices at a full inch.

Another error is overcrowding the baking sheet, which limits air circulation and prevents proper roasting.

Ensure there is enough space between the steaks. Finally, failing to rest the meat after cooking will result in juices running onto the plate instead of staying in the beef.

How to tell it’s done

The beef patties are fully cooked when they reach an internal temperature of 160°F (71°C). The cabbage should be tender when pierced with a fork but still hold its shape as a steak.

The cheese should be completely melted and lightly bubbling, with an appealing golden hue in areas where it has touched the hot baking sheet or sauce.

  • Ground meat: 160°F (71°C) in the thickest part
