Before you start

Before you begin cooking, gather all your ingredients and equipment. Position your oven rack in the center position and preheat the oven to 400°F (204°C). Line a large rimmed baking sheet with parchment paper to prevent sticking.

Wash the cabbage head, pat it dry, and remove any damaged outer leaves. Measure out your seasoned ground beef, marinara sauce, and shredded mozzarella cheese so everything is ready for a smooth assembly process.

Ingredients at a glance (4)
  • 1 head green cabbage, cut into 1-inch thick rounds
  • 1 lb seasoned ground beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

Preparing and Stuffing the Cabbage Rings

  1. Slice and Hollow Cabbage
Preheat the oven to 400°F (204°C). Line a large baking sheet with parchment paper. Cut the green cabbage into four 1-inch thick rounds. Carefully hollow out the center of each round to leave a 1-inch wide outer ring, creating a neat cavity for the filling. Place the hollowed cabbage rings onto the prepared baking sheet.
Look for The cabbage rings should be uniform and intact on the sheet.
Tip Save the cabbage centers for stir-fries or salads.
  2. Stuff Cabbage Rings
Divide the seasoned ground beef into four equal portions. Press one portion of the beef filling firmly into the center cavity of each cabbage ring on the baking sheet, smoothing the top so it is level with the cabbage border.
Look for The beef should be tightly packed inside the cabbage cavity.
Tip Press firmly so the filling does not shrink away during baking.

At the end of this initial preparation phase, you will have four neat, sturdy cabbage rings arranged on your lined baking sheet. Each ring will be tightly stuffed with the seasoned ground beef mixture, pressed flat and level with the cabbage borders.

The meat should be raw but evenly packed, and no loose cabbage leaves should be sticking up, ensuring a uniform bake. The kitchen will remain clean, and the oven will be fully preheated and ready.

Baking the Stuffed Rings to Perfection

  1. Bake the Stuffed Rings
Bake in the preheated oven at 400°F (204°C) for 20 to 25 minutes, until the cabbage is tender and the beef is cooked through to an internal temperature of 160°F (71°C) when tested with a meat thermometer.
Look for The cabbage edges should be lightly browned and tender.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip A meat thermometer is the best way to ensure perfect doneness.

By the end of the baking phase, the cabbage rings will look tender and slightly charred on the outer edges, and the beef filling will be fully cooked, firm, and lightly browned. You will smell the rich, comforting aroma of roasted cabbage and seasoned beef filling the kitchen, and the internal temperature of the meat will have safely reached 160°F (71°C) when tested with a quick-read meat thermometer.

Adding the Cheesy Marinara Topping

  1. Add Sauce and Cheese
Remove the baking sheet from the oven and spoon 1/4 cup of marinara sauce over the beef center of each cabbage ring. Sprinkle 1/4 cup of shredded mozzarella cheese evenly over the marinara sauce on each ring.
Look for The cheese and sauce should cover the beef completely.
Tip Use a high-quality marinara for the best flavor.
  2. Broil Until Bubbly
Switch the oven to broil on high. Return the baking sheet to the oven and broil for 3 to 5 minutes, watching closely, until the mozzarella cheese is melted, golden brown, and bubbling. Let rest for 5 minutes before serving.
Look for The cheese should be bubbly with golden-brown spots.
Tip Do not walk away from the broiler, as cheese burns quickly.

At the end of this final phase, the cabbage rings will be topped with a bubbling, golden-brown blanket of melted mozzarella cheese over hot marinara sauce. The cheese will have beautiful browned spots from the broiler, and the entire dish will be glistening and hot. You will hear the cheese sizzling and see steam rising from the pan, indicating it is ready to rest briefly before being served.

Common mistakes

One common mistake is slicing the cabbage rounds too thin, which causes them to fall apart during baking and lose their ability to hold the beef. Ensure they are a full inch thick.

Another error is over-packing the ground beef mixture, which can result in a dense, rubbery filling. Press the beef firmly but gently into the rings. Finally, do not skip lining the baking sheet, as the cabbage can stick and tear when you try to lift it.

How to tell it’s done

The dish is perfectly done when the cabbage outer rings are completely tender and easily pierced with a fork, and the beef filling is firm and cooked through.

To ensure food safety, always insert a meat thermometer into the thickest part of the ground beef filling; it must register at least 160°F (71°C). The mozzarella cheese on top should be fully melted, bubbly, and speckled with golden-brown patches.

  • Ground meat: 160°F (71°C) in the thickest part
