Tips for success

To achieve the ultimate cheese pull, serve the casserole hot, about ten minutes after it comes out of the oven. Letting it rest briefly is crucial because it allows the juices to redistribute and the cheese to firm up slightly, which prevents the layers from sliding apart when sliced.

Use a sharp spatula to cut clean portions and lift them carefully to showcase the beautiful layers of beef and potatoes.

If you prefer a crispier top layer, you can turn on the broiler for the last two to three minutes of baking. Keep a very close eye on the oven if you do this, as the cheese can go from perfectly golden to burnt very quickly.

Additionally, slicing the potatoes to a uniform thickness is easiest with a mandoline, but always use the safety guard to protect your fingers.

Variations

  • Spicy Jalapeno Beef Bake: Add diced jalapenos to the seasoned ground beef while cooking and substitute pepper jack cheese for a spicy kick.
  • Bacon Cheddar Potato Bake: Sprinkle crumbled cooked bacon between the layers along with the seasoned beef for an extra smoky flavor profile.
  • Herb and Garlic Potato Bake: Mix dried thyme and rosemary into the seasoned ground beef to add a fragrant, earthy herb aroma.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days, cooling them for no more than 2 hours first.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw completely in the refrigerator overnight before reheating.
Reheat
Reheat individual portions in the microwave, or cover the baking dish with foil and heat in a 350°F (175°C) oven until hot throughout.

Allow any leftover casserole to cool completely at room temperature for no more than two hours before storing. Transfer the leftovers to an airtight container or cover the baking dish tightly with plastic wrap or aluminum foil.

Store the casserole in the refrigerator for up to three to four days. This dish reheats beautifully, making it an excellent option for quick weekday lunches or dinners.

This casserole can be assembled ahead of time to save dinner-prep stress. Assemble the layers of potatoes, cooked beef, and cheese in the baking dish, cover it tightly with plastic wrap, and store it in the refrigerator for up to twenty-four hours before baking.

When ready to cook, remove the plastic wrap, cover with aluminum foil, and bake as directed, adding about five to ten minutes to the initial covered baking time to account for the cold dish.

Serving ideas

Serve this hearty casserole as a complete, comforting main dish. Because it is rich and savory, it pairs beautifully with a light, crisp side salad tossed in a simple vinaigrette to balance the flavors. Steamed green vegetables, such as broccoli, green beans, or asparagus, also make excellent accompaniments, adding a fresh contrast of color and texture to the plate.

For a casual family dinner, place the baking dish directly on a heat-proof trivet in the center of the table so everyone can enjoy the visual appeal of the bubbling cheese and steam rising from the dish. Provide a large serving spoon or spatula to ensure each portion includes all the delicious layers of seasoned beef, tender potatoes, and melted cheddar.

Ingredients

  • 1 1/2 lbs seasoned ground beef
  • 2 lbs potatoes, sliced into 1/8-inch rounds
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the potatoes into thin, even rounds about one-eighth of an inch thick. Grease a 9x13-inch baking dish and set it aside.
  2. Heat a large skillet over medium-high heat. Add the seasoned ground beef, breaking it up with a spoon. Cook for 6 to 8 minutes until the beef is fully browned and has reached a safe internal temperature of 160°F (71°C).
  3. Arrange half of the sliced potatoes in an even layer at the bottom of the prepared baking dish. Spread the cooked seasoned ground beef evenly over the potato layer, then sprinkle with 1 cup of the cheddar cheese.
  4. Layer the remaining sliced potatoes evenly on top of the cheese and beef layer. Press down gently to compact the casserole slightly.
  5. Cover the baking dish tightly with aluminum foil. Place it in the preheated oven and bake for 40 minutes, or until the potatoes are tender when pierced with a fork.
  6. Carefully remove the foil, sprinkle the remaining 1 cup of cheddar cheese over the top, and return the dish to the oven uncovered. Bake for an additional 15 minutes until the cheese is melted, bubbly, and golden-brown. Let rest for 10 minutes before serving.
