Before you start

Before you begin, ensure your cream cheese is softened to room temperature for easier mixing, but keep the raw seafood strictly chilled in the refrigerator until ready to combine.

Chop the cold shrimp into uniform pieces for even cooking, limiting its time out of the fridge to under 30 minutes. Preheat your oven to 375°F (190°C) and prepare your toasted baguette slices in advance so everything is ready to serve hot.

Ingredients at a glance (6)
  • 8 oz cream cheese, softened
  • 1 lb shrimp, peeled and chopped
  • 8 oz lump crab meat
  • 1 1/2 cups shredded mozzarella cheese
  • fresh chives, chopped, for serving
  • toasted baguette slices, for serving

Instructions

Mixing the base

  1. Prepare the base
Keep the shrimp and crab refrigerated until right before mixing, never leaving raw seafood at room temperature for more than 30 minutes. In a large bowl, quickly fold the cold chopped raw shrimp and lump crab meat into the softened cream cheese until thoroughly and evenly blended.
Look for The mixture should be smooth and creamy with no large lumps of cream cheese remaining.
Tip Make sure the cream cheese is softened beforehand so it blends easily with the chilled seafood without excessive mixing.

The mixture should be thoroughly combined with no streaks of cream cheese remaining.

The chilled seafood should be evenly distributed throughout the bowl, creating a uniform, thick base that is ready to be transferred to your baking dish without lingering on the counter.

Baking until golden

  1. Assemble and bake
Spread the seafood mixture evenly into the ceramic baking dish. Sprinkle the shredded mozzarella cheese generously over the top. Place the dish into a preheated oven at 375°F (190°C) and bake until the cheese is melted and bubbling. Continue baking until the shrimp reaches an internal temperature of 145°F (63°C) and is fully cooked through.
Look for The cheese should be golden brown and bubbling around the edges of the dish.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip For an extra golden crust, you can place the dish under the broiler for the final minute of cooking, but watch it closely to avoid burning.

At the end of the baking phase, the dip should be bubbling intensely, and the cheese topping should be golden brown. The aroma of roasted seafood and melted cheese should be prominent and inviting throughout your kitchen.

Final resting

  1. Garnish and serve
Remove the baking dish from the oven and allow it to rest for at least five minutes before serving. This pause allows the dip to settle slightly, making it easier to scoop. Sprinkle the freshly chopped chives over the top and serve immediately alongside the toasted baguette slices while the dip is still warm and stretchy.
Look for The dip should be slightly firmed up but still very hot and gooey.
Tip Keep the baguette slices warm in the oven while the dip finishes baking so everything is served at the ideal temperature.

After resting, the dip should have settled enough to allow for a clean scoop. The texture should be creamy and rich, with the chives providing a fresh color contrast against the melted, browned cheese surface.

Common mistakes

A common mistake is leaving raw seafood out at room temperature for too long; keep it chilled right until mixing to ensure strict food safety.

Avoid over-baking the dip, as this can cause the cheese to separate and the seafood to become tough. Additionally, ensure the shrimp pieces are cut uniformly so that every bite cooks evenly and reaches safe doneness simultaneously.

How to tell it’s done

The dip is perfectly cooked when the cheese is golden and bubbling vigorously across the entire surface. Because the dish contains raw shrimp, it is essential that the internal temperature of the seafood reaches 145°F (63°C).

Use a digital thermometer to check the thickest part of the dip. The texture should be thick and cohesive, with the cheese pull remaining stretchy and the seafood pieces tender and opaque.

  • Shellfish: 145°F (63°C) in the thickest part
