Before you start

Before beginning, ensure that all ingredients are measured and ready for use. Preheat the oven to 400°F (200°C) to ensure the baking environment is hot enough for proper caramelization.

Wash the cabbage head thoroughly under cold running water and pat it dry with paper towels. Prepare the baking sheet with a layer of parchment paper, which will facilitate easy removal of the cabbage rounds once they are cooked and topped with the beef and cheese.

Ingredients at a glance (3)
  • 1 head green cabbage, sliced into 1-inch thick rounds
  • 1 lb ground beef
  • 1 cup shredded mozzarella cheese

Instructions

Roasting the Cabbage

  1. Prepare and Roast Cabbage
Preheat the oven to 400°F (200°C). Slice the head of cabbage into 1-inch thick rounds. Place them on a parchment-lined baking sheet. Roast the cabbage for 20 minutes until the edges start to brown and the center becomes tender.
Look for The edges should be golden brown and the cabbage slices tender when pierced with a fork.
Tip Ensure the rounds are sliced evenly so they cook at the same rate in the oven.

The cabbage rounds should look golden brown at the edges and feel tender when tested with a fork. The kitchen will smell slightly sweet as the cabbage caramelizes. Ensure the rounds are not overly charred before proceeding to the next step, as they will continue to cook slightly when the beef is added in the subsequent phase.

Cooking the Beef

  1. Prepare and Cook Beef
Place the ground beef in a bowl. Once the cabbage is partially cooked, remove the baking sheet from the oven. Evenly distribute the ground beef mixture over each cabbage round. Return the baking sheet to the oven and bake for 15 minutes, or until the ground beef reaches an internal temperature of 160°F (71°C).
Look for The beef will brown and the internal temperature will reach 160°F (71°C) when checked with a meat thermometer.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Press the beef down slightly onto the cabbage to help it stay in place during the baking process.

The ground beef should be browned and cooked through, with juices running clear. Using a thermometer is the best way to verify that the beef has reached 160°F (71°C). The cabbage should now be completely soft and have absorbed the savory juices released by the beef during this second stage of the baking process.

Melting the Cheese

  1. Add Cheese and Serve
Remove the baking sheet from the oven and sprinkle the shredded mozzarella cheese over the beef-topped cabbage rounds. Return the tray to the oven for an additional 3 to 5 minutes, or until the cheese is melted and bubbling. Remove from the oven and let the rounds rest for 5 minutes before serving.
Look for The cheese will be fully melted and slightly browned in spots, creating a golden layer on top of the beef.
Tip Letting the dish rest helps the cheese set slightly, making it easier to transfer to plates.

The final phase is complete when the mozzarella cheese has completely melted and developed a light, golden-brown crust. The entire dish should be fragrant and bubbling.

Once these signs are evident, remove the tray from the oven and allow it to rest, which ensures the cheese layer settles correctly before moving the rounds to individual serving plates.

Common mistakes

A common mistake is slicing the cabbage too thinly, which causes the rounds to fall apart during the roasting process; aim for a uniform 1-inch thickness. Another error is overloading the rounds with too much beef, which can prevent the center from cooking through evenly.

Ensure the beef is spread in a thin, even layer. Finally, avoid skipping the resting period, as this is crucial for allowing the juices to redistribute and for the cheese to firm up slightly.

How to tell it’s done

The dish is done when the cabbage is fork-tender and the ground beef is fully cooked. Use a digital meat thermometer inserted into the center of the beef to confirm it has reached an internal temperature of 160°F (71°C).

At this point, the cheese should be completely melted, bubbling, and exhibiting golden-brown spots. Allow the rounds to rest for 5 minutes after removing them from the oven to ensure the structure holds together during serving.

  • Ground meat: 160°F (71°C) in the thickest part
