Before you start

Before starting, ensure that your chicken breasts are completely thawed if they were frozen. Pat the chicken dry with paper towels; removing surface moisture is essential for achieving a good sear in the air fryer.

Prepare your workspace by laying out a clean cutting board and having your knife and ingredients ready.

If the chicken is very thick, you can butterfly it further to ensure it cooks through evenly. Always wash your hands and sanitize the cutting board after handling raw chicken to maintain a safe kitchen environment.

Ingredients at a glance (3)
  • 2 pieces chicken breasts, boneless and skinless
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices

Instructions

Preparation phase

  1. Prepare the chicken
Cut a deep pocket into the side of each chicken breast using a sharp knife, being careful not to slice all the way through to the other side. This creates a cavity to hold the cheese and pepperoni filling securely.
Look for The pocket should be deep enough to accommodate the cheese and pepperoni without spilling out during the cooking process.
Tip Keep the chicken cold until the moment you are ready to cut and fill it to maintain food safety standards.

The chicken breasts should be clean, dry, and carefully sliced to create a secure pocket. The mozzarella should be freshly shredded, and the pepperoni slices should be ready to be tucked inside. Ensure your air fryer is clean and ready to go.

Cooking phase

  1. Stuff and air fry
Stuff the chicken pockets generously with shredded mozzarella cheese and pepperoni slices. Place the stuffed breasts into the air fryer basket. Cook at 375°F (190°C) for approximately 15 minutes, or until the chicken is golden brown and cooked through.
Look for The cheese should be bubbling and golden brown on top, with the chicken appearing firm and opaque throughout.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the air fryer basket is not overcrowded to allow hot air to circulate evenly around the chicken breasts.

The chicken is perfectly cooked when the exterior is a deep golden brown and the cheese is oozing from the center. The air fryer should be emitting a slight sizzling sound, and the aroma of roasted chicken and melted cheese should be noticeable.

Finishing phase

  1. Rest and serve
Remove the chicken from the air fryer carefully using tongs and transfer it to a plate. Allow the chicken to rest for at least 5 minutes before slicing into it. This step helps the juices redistribute, keeping the meat succulent and the cheese filling perfectly gooey.
Look for The internal temperature should reach at least 165°F (74°C) to ensure the chicken is fully cooked and safe to eat.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a fork to scrape any crispy bits of cheese from the air fryer basket if they have spilled over during the cooking process.

The chicken must rest on the plate for at least 5 minutes before you attempt to cut into it. The cheese should hold its shape slightly but remain soft and gooey, and the meat should be firm, juicy, and fully cooked through.

Common mistakes

A common mistake is slicing the chicken pocket too thin or too deep, which can cause the filling to leak out during the cooking process. Aim for a pocket that leaves at least an inch of meat intact on the edges.

Another error is overcrowding the air fryer basket; if the chicken pieces are touching, the air cannot circulate properly, which will lead to uneven cooking and soggy spots. Finally, failing to rest the meat after cooking will cause the juices to run out immediately upon slicing, leaving the chicken dry.

How to tell it’s done

To ensure the chicken is perfectly cooked, use a digital meat thermometer inserted into the thickest part of the breast, avoiding the cheese filling. The chicken is done when it reaches an internal temperature of 165°F (74°C).

At this temperature, the meat will be opaque and juicy, and the cheese should be fully melted and bubbling. Letting the chicken rest for at least 5 minutes is crucial, as this allows the internal juices to stabilize, resulting in a much more tender and flavorful final product.
