Tips for success
For an extra crispy top, you can broil the casserole for 2-3 minutes after it's done in the slow cooker—just make sure the insert is oven-safe. If you prefer a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the soup before layering.
You can also add sautéed mushrooms or onions, but the video keeps it simple. For a more indulgent version, stir in a cup of sour cream just before serving to make the sauce extra creamy.
To make this a complete meal, serve it alongside a simple green salad or steamed vegetables. The casserole is quite rich, so it pairs well with something light and acidic.
If you have leftovers, they reheat beautifully—just add a splash of milk or cream when reheating to restore the creamy texture. This dish is also great for breakfast the next day, topped with a fried egg if desired.
Variations
- Add Vegetables: Stir in 1 cup of frozen peas and carrots or a handful of chopped broccoli florets along with the soup for extra color and nutrition. No need to thaw them; they'll cook in the slow cooker.
- Spicy Version: Add 1/4 teaspoon of cayenne pepper or a diced jalapeño to the soup layer for a spicy kick. You can also use pepper jack cheese instead of cheddar for extra heat.
- Chicken Addition: For a heartier meal, add 2 cups of cooked, shredded chicken (rotisserie or leftover) on top of the tater tots before adding the soup. This turns the dish into a complete one-pot dinner.
- Loaded Baked Potato Style: Top the finished casserole with sour cream, sliced green onions, and extra crumbled bacon just before serving to mimic a loaded baked potato.

Store leftover casserole in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave for 1-2 minutes, or in a 350°F (175°C) oven for 10-15 minutes until warmed through.
You can assemble the casserole the night before, cover, and refrigerate it. In the morning, place it in the slow cooker and cook on low for 4-5 hours. Add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve this bake straight from the slow cooker for a casual, family-style meal. It's hearty enough to be the main event, but also works as a side dish alongside grilled meats or a simple green salad.
The creamy, cheesy texture is comforting and satisfying, making it a hit at potlucks and gatherings. Garnish with fresh chives or parsley if you like, though the video keeps it simple.
For a fun twist, serve the casserole in individual bowls with a dollop of sour cream and a sprinkle of extra bacon.
It also makes a great brunch dish, especially with a side of scrambled eggs or fresh fruit. Leftovers can be enjoyed cold or reheated, and the flavors only get better the next day.

Cheddar Ranch Mushroom Tater Tot Bake: Easy Crockpot Dinner

Ingredients
- 2 lb frozen golden potato tater tots
- 1 cup crispy crumbled bacon
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 oz dry buttermilk ranch seasoning mix
- 2 cups shredded sharp yellow cheddar cheese
- 4 tbsp salted butter, cut into pats
Instructions
- Place the frozen tater tots in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the crispy crumbled bacon evenly over the tater tots.
- Spoon the condensed cream of mushroom soup over the potato mixture, spreading it gently to cover as much surface as possible. Sprinkle the dry ranch seasoning mix evenly over the top.
- Sprinkle the shredded sharp cheddar cheese evenly over the soup layer. Dot the top with the pats of salted butter.
- Cover the slow cooker with its lid. Cook on LOW for 4 hours, or until the tater tots are tender and the cheese is melted and bubbly around the edges. Do not stir during cooking.
- After 4 hours, check that the tater tots are tender by piercing one with a fork. The cheese should be melted and the edges lightly browned. If not yet done, cook for an additional 30 minutes.
- Using a serving spoon, scoop the hot casserole onto plates or a serving platter. Serve immediately while warm and bubbly.
