Tips for success
For the best flavor, use a high-quality salsa that you enjoy eating on its own. The salsa's flavor will concentrate as it cooks, so choose one with a good balance of tang and heat.
If you prefer a smoky flavor, use a salsa with roasted tomatoes or chipotle peppers. You can also add a dash of smoked paprika to the taco seasoning for extra depth.
To make this dish even easier, use pre-shredded cheddar cheese and pre-diced green chiles. If you have leftover cooked chicken, you can use it, but reduce the cook time to just 2-3 hours on LOW to warm through and meld the flavors.
The dish is also great with a squeeze of fresh lime juice and a sprinkle of cilantro before serving.
Variations
- Spicy Chipotle Version: Add 1-2 chipotle peppers in adobo sauce, minced, along with the salsa. This adds a smoky, spicy heat that pairs well with the creamy cheese. Adjust the amount to your heat preference.
- Black Bean and Corn Fiesta: Add 1 cup drained and rinsed black beans along with the corn. This adds extra fiber and makes the dish more substantial. Serve over rice for a complete meal.
- Creamy Green Chile Chicken: Replace the red salsa with a green tomatillo salsa or salsa verde. This gives the dish a tangier, brighter flavor. You can also add a handful of chopped fresh cilantro before serving.
- Cheesy Chicken Tacos: Instead of serving over rice, spoon the chicken into warm tortillas and top with shredded lettuce, diced tomatoes, and a dollop of sour cream. This turns the dish into a fun, hands-on meal.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools. Reheat gently on the stovetop or in the microwave, adding a splash of chicken broth or water to loosen the sauce if needed. The chicken can also be used in tacos, burritos, or over nachos.
This recipe can be assembled the night before. Place all ingredients in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed.
You may need to add 30 minutes to the cook time since the ingredients start cold. This makes it a true dump-and-go meal for busy mornings.
Serving ideas
Serve this chicken over fluffy cilantro-lime rice to soak up the creamy sauce. The bright, citrusy rice complements the rich, savory chicken beautifully.
For a low-carb option, serve over cauliflower rice or alongside a crisp green salad. You can also spoon the chicken into warm corn or flour tortillas and top with avocado, salsa, and fresh cilantro.
This dish also makes a fantastic filling for tacos, burritos, or quesadillas. The creamy sauce adds a luxurious texture to any preparation. For a fun appetizer, serve the chicken with tortilla chips as a hearty dip. Leftovers are just as delicious the next day, making this a great meal-prep option.

Cheddar Hatch Chile Corn Chicken Thighs: 5-Ingredient Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken thighs
- 4 oz diced green chiles
- 1 cup frozen corn kernels
- 2 tbsp taco seasoning
- 8 oz cream cheese, softened and cubed
- 1 1/2 cups shredded sharp cheddar cheese
- 1 cup red salsa (jarred or homemade)
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Scatter the diced green chiles, frozen corn, and taco seasoning evenly over the chicken. No need to stir.
- Place the cream cheese cubes in the center of the slow cooker. Sprinkle the shredded cheddar over the top. Pour the salsa over everything, spreading it gently to cover the cream cheese and cheddar.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken is fork-tender and easily shreds. The sauce should be bubbling gently around the edges.
- Use two forks to shred the chicken directly in the slow cooker. Stir the shredded chicken into the sauce until everything is coated. The sauce will thicken as it sits.
- Serve the chicken and sauce over cilantro-lime rice, in warm tortillas, or on its own. Garnish with fresh cilantro, if desired.
