Before you start

Before beginning the cooking process, ensure all ingredients are prepped and ready for use. Wash the cabbage thoroughly and remove any damaged outer leaves before separating the remaining leaves for blanching.

Dice the bell peppers into uniform pieces to ensure they cook evenly with the sausage. Have the Cajun seasoning measured out, and ensure the shrimp are cleaned, peeled, and deveined. Preheating the oven early ensures it is at the correct temperature when the rolls are ready to go in.

Ingredients at a glance (5)
  • 1 large green cabbage, leaves separated and blanched
  • 1 lb shrimp, peeled and deveined
  • 12 oz andouille sausage, sliced
  • 2 bell peppers, diced
  • 2 tbsp Cajun seasoning

Instructions

Blanching and Sautéing

  1. Prepare Cabbage and Filling
Blanch the cabbage leaves in boiling water for 3 minutes until pliable, then drain and set aside. In a skillet, sauté the sliced sausage and diced bell peppers until the peppers are tender. Add the shrimp and Cajun seasoning, cooking just until the shrimp are opaque.
Look for Shrimp turns opaque and peppers soften.
Tip Do not overcook the shrimp during the sauté, as they will finish in the oven.

At this stage, the cabbage leaves should be soft and pliable enough to fold without snapping. The sausage and peppers should be fragrant and beginning to brown, indicating that the flavors have developed. The shrimp should be added last to the skillet to ensure they remain tender and do not become rubbery before they even enter the oven for the final bake.

Assembly and Baking

  1. Assemble and Bake
Divide the shrimp and sausage mixture among the blanched cabbage leaves. Roll or fold the leaves tightly to form cups and place them seam-side down in a glass baking dish. Bake at 375°F (190°C) for 15 minutes. Ensure the sausage reaches an internal temperature of 160°F (71°C) and the shrimp reaches 145°F (63°C).
Look for Cabbage is tender and filling is heated through.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use toothpicks to secure the cabbage rolls if they struggle to hold their shape.

The assembled rolls should look compact and neat in the baking dish. During the baking phase, the kitchen should smell aromatic with the scent of spices and roasting cabbage. Check that the rolls are arranged seam-side down to prevent them from unraveling in the oven. The cabbage should begin to look slightly golden at the edges, signifying that it is cooking through properly.

Final Rest

  1. Rest and Serve
Remove the baking dish from the oven and allow the stuffed cabbage to rest for 5 minutes before serving. Serve warm, ensuring any leftovers are refrigerated within two hours of cooking.
Look for Steam is rising and the dish is fragrant.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Serve with a wedge of lemon to brighten the Cajun spices.

After removing the dish from the oven, the cabbage should appear tender and the filling should be bubbling slightly. The resting period is crucial for the juices to redistribute throughout the filling, ensuring each bite is moist and flavorful.

The dish should feel warm and look inviting, with the bright colors of the peppers and shrimp visible through the tender cabbage exterior.

Common mistakes

A common mistake is failing to blanch the cabbage leaves long enough, which makes them difficult to roll and results in a tough, chewy exterior. Conversely, boiling them for too long can cause them to disintegrate.

Another error is neglecting to drain the filling well after sautéing; excess liquid can accumulate at the bottom of the baking dish, making the cabbage soggy. Finally, avoid overstuffing the leaves, as this can cause them to burst open during the baking phase.

How to tell it’s done

The dish is considered done when the cabbage leaves are tender and translucent, and the filling is hot throughout. The shrimp, as a shellfish, must reach an internal temperature of at least 145°F (63°C), and the sausage must reach 160°F (71°C) to be safely consumed.

When checking, insert a thermometer into the center of the largest roll to ensure the temperature is consistent across the entire dish, guaranteeing both safety and optimal texture for consumption.

  • Shellfish: 145°F (63°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
