Tips for success
For the best flavor, use a high-quality Cajun seasoning that includes paprika, garlic powder, onion powder, cayenne, and oregano. If the blend is very salty, reduce the amount slightly. You can also make your own by mixing these spices to control the heat level.
To make the dish spicier, add a pinch of cayenne pepper or a few dashes of hot sauce to the gravy before cooking.
For a milder version, use a mild Andouille sausage or rinse the sausage in hot water to remove some of the spice coating. Always taste the gravy before serving and adjust the seasoning to your preference.
Variations
- Chicken Thighs: Substitute bone-in chicken thighs for pork chops. Cook on low for 5–6 hours until the chicken reaches 165°F (74°C). The cooking time may be slightly shorter, so check for doneness earlier.
- Extra Vegetables: Add sliced mushrooms, okra, or diced tomatoes along with the holy trinity. These vegetables add more texture and flavor to the gravy. Increase the amount of gravy by 1/2 cup if adding extra vegetables.
- Spicy Andouille: Use hot Andouille sausage or add 1–2 teaspoons of cayenne pepper to the seasoning. For an extra kick, stir in a few dashes of Louisiana hot sauce before serving. Adjust the heat to your preference.
- Make It Gluten-Free: Ensure the Cajun seasoning and gravy are gluten-free, and serve over rice instead of dirty rice (which may contain wheat). Use gluten-free soy sauce if adding any. Check all labels carefully.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. The flavors continue to meld, making it even better the next day.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through.
Refrigerate any leftovers in an airtight container for up to 3 days. The gravy will thicken as it cools; add a splash of chicken broth or water when reheating to loosen it.
Pork chops can be reheated gently in the microwave or on the stovetop over low heat, being careful not to dry them out.
The entire dish can be assembled in the slow cooker insert the night before and refrigerated. In the morning, place the insert in the slow cooker and cook on low as directed.
This makes it even easier for busy days. The cooked dish also freezes well for up to 3 months.
Serving ideas
Serve the smothered pork chops over hot cooked dirty rice, which soaks up the rich gravy beautifully. The rice provides a hearty base that balances the spicy, smoky flavors. A side of crusty bread or cornbread is perfect for sopping up every last bit of sauce.
For a lighter option, serve over steamed white rice or even cauliflower rice. The dish is also delicious with mashed potatoes or grits.
Garnish with extra chopped green onions and a few dashes of hot sauce for those who like it hotter. This is a complete meal in one bowl.

Crockpot Cajun Andouille & Bell Pepper Smothered Pork Chops

Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 2 tbsp Cajun seasoning
- 1/2 lb sliced Andouille sausage
- 1 medium yellow onion, diced
- 2 stalks celery, diced
- 1 medium green bell pepper, diced
- 1 1/2 cups dark Cajun chicken gravy
- hot cooked dirty rice, for serving
- chopped green onions, for serving
Instructions
- Pat the pork chops dry with paper towels. Rub both sides evenly with the Cajun seasoning. Set aside while preparing the vegetables.
- Place the seasoned pork chops in the bottom of a 6-quart slow cooker. Scatter the diced onion, celery, and green bell pepper over the chops. Add the sliced Andouille sausage on top.
- Pour the dark Cajun chicken gravy over everything, making sure the meat and vegetables are mostly covered.
- Cover the slow cooker and cook on LOW for 6 hours, until the pork chops are tender and easily pull apart with a fork. Let it rest for 3 minutes before slicing.
- Use an instant-read thermometer to check that the thickest part of a pork chop reaches 145°F (63°C). The meat should be tender and nearly falling off the bone. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork chops rest in the gravy for at least 3 minutes before serving. This allows the juices to redistribute.
- Spoon the hot cooked dirty rice onto plates. Top with a pork chop and plenty of the sausage, peppers, and gravy from the slow cooker.
- Sprinkle with chopped green onions and serve hot.
