Tips for success
For the best flavor, choose a BBQ sauce that is thick and not too vinegary. A Kansas City-style sauce works well. If you want a spicier kick, add a pinch of cayenne or a few dashes of hot sauce to the sauce before pouring.
You can also add a splash of Worcestershire sauce for extra umami, but keep it simple if you prefer the pure molasses flavor.
The onions are a crucial component—they melt into the sauce, adding body and sweetness. Don't chop them too finely; thick slices hold up better during the long cook.
If you have time, you can caramelize the onions in a skillet before adding them, but it's not necessary. The slow cooker will do the caramelizing for you, albeit more gently.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, to the BBQ sauce for a smoky heat. Reduce the brown sugar to 1/3 cup to balance the spice.
- Honey Garlic: Replace the molasses garlic BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 2 tbsp rice vinegar. Omit the brown sugar.
- Root Beer: Substitute the BBQ sauce with 1 1/2 cups root beer and 1/2 cup ketchup. Add 1 tbsp Worcestershire sauce for depth. Reduce brown sugar to 1/4 cup.
- Coffee Molasses: Stir 1/2 cup strong brewed coffee into the BBQ sauce along with 2 tbsp molasses. The coffee adds an earthy bitterness that complements the sweet rub.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water to loosen the sauce.
- Freezer
- Freeze the cooled ribs and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 325°F (165°C) oven for 15-20 minutes, or microwave in 30-second bursts until hot.
Store leftover short ribs in an airtight container in the refrigerator for up to 4 days. The sauce will solidify as the fat sets, so reheat gently on the stovetop or microwave, adding a splash of beef broth or water to loosen it if needed.
This dish actually tastes even better the next day. You can assemble the slow cooker the night before, cover, and refrigerate, then start cooking in the morning.
Or cook the ribs fully, let them cool, and refrigerate. Reheat in a 325°F (165°C) oven for about 20 minutes, or until warmed through.
Serving ideas
Serve the short ribs over creamy mashed potatoes, polenta, or egg noodles to catch the luscious sauce. A side of roasted vegetables or a crisp green salad balances the richness.
Sprinkle with chopped fresh parsley for a pop of color, if you like—though the video doesn't show it, a little green never hurts.
For a casual dinner, pile the ribs onto soft rolls and let everyone build their own sandwiches. The meat is so tender it falls apart, making perfect pulled-beef sandwiches. Don't forget extra napkins—this is a messy, delicious affair.
