Tips for success
For the best flavor, use a high-quality barbecue sauce that you love. Since it's a main component, the sauce's taste will shine through.
If you want a spicier kick, add a teaspoon of chipotle powder or a few dashes of hot sauce to the rub. You can also add a splash of apple cider vinegar to the sauce before cooking to brighten the flavors, but this is optional.
These ribs are incredibly versatile. They can be served as a main course with sides, or shredded and piled onto buns for BBQ sandwiches. The leftover sauce is fantastic drizzled over roasted vegetables or used as a dipping sauce.
To make the dish even more indulgent, sprinkle with fresh chopped parsley or chives before serving, though the video does not show this.
Variations
- Spicy Chipotle Ribs: Add 1-2 chipotle peppers in adobo sauce, minced, to the barbecue sauce before pouring over the ribs. The smoky heat will complement the brown sugar and paprika, creating a bold, spicy-sweet flavor.
- Honey Garlic Ribs: Reduce the brown sugar to 2 tablespoons and add 2 tablespoons of honey and 4 minced garlic cloves to the sauce. This creates a sticky, sweet-savory glaze that is irresistible.
- Root Beer Ribs: Replace 1 cup of the barbecue sauce with 1 cup of root beer. The soda adds a subtle sweetness and helps tenderize the meat. The final sauce will be slightly thinner but still delicious.
- Smoky Bourbon Ribs: Add 1/4 cup of bourbon to the sauce along with 1 teaspoon of liquid smoke. The bourbon adds a warm, oaky depth, while the liquid smoke enhances the smoky character.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently in a covered pot over low heat, adding a splash of water if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a covered saucepan over low heat, stirring occasionally, until hot. Add a splash of water or broth to loosen the sauce if it is too thick.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; you can thin it with a splash of water or beef broth when reheating. The ribs also freeze well for up to 3 months.
This recipe is ideal for meal prep. Assemble everything in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook as directed. You can also cook the ribs fully, then cool and refrigerate them; reheat gently on the stovetop or in the oven.
Serving ideas
Serve the ribs hot, straight from the slow cooker, with a generous spoonful of the caramelized onions and sauce. They pair beautifully with creamy mashed potatoes, buttered egg noodles, or a simple green salad.
Crusty bread or cornbread is essential for sopping up the extra sauce. For a low-effort side, roasted vegetables like carrots or green beans work well.
For a casual gathering, set out the ribs on a large platter and let guests help themselves. Provide plenty of napkins, as the sauce is sticky and delicious.
If you have leftover sauce, serve it on the side for those who want extra. These ribs are also fantastic the next day, cold or reheated, shredded into tacos or piled onto a bun.

Brown Sugar BBQ Short Ribs: 10-Minute Crockpot Dinner

Ingredients
- 3 lb bone-in beef short ribs
- 1/4 cup dark brown sugar, packed
- 1 tbsp smoked paprika
- 2 medium yellow onions, sliced
- 2 cups Kansas City-style barbecue sauce
Instructions
- Place the beef short ribs in the bottom of a 6-quart slow cooker. Sprinkle the dark brown sugar and smoked paprika evenly over the ribs, turning to coat each piece lightly. Scatter the sliced yellow onions over the top.
- Pour the Kansas City-style barbecue sauce over the ribs and onions. Use a spoon or spatula to spread the sauce so it covers the meat and onions as evenly as possible. Do not stir.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4 to 5 hours, until the meat is fork-tender and nearly falling off the bone. Do not open the lid during cooking except to check near the end.
- Insert a fork into the thickest part of a rib. The meat should be very tender and start to pull away from the bone easily. If it resists, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to firm up slightly, making it easier to handle.
- Using tongs or a fork, carefully lift the ribs out of the slow cooker and place them on a serving platter. Spoon some of the sauce and caramelized onions over the top. Serve hot.
