Tips for success
For the best texture, use a metal baking pan and avoid overbaking. The blondies will continue to cook from residual heat as they cool, so pull them out when the center is just set.
Let them cool completely in the pan before cutting for cleaner squares, or serve them warm for a gooey, melty experience.
To enhance the toffee flavor, lightly crush the toffee bits before adding them to the batter. You can also reserve a few to sprinkle on top before baking for a prettier presentation.
If you prefer a softer crust, cover the pan with foil for the last 5 minutes of baking. Flaky sea salt is essential — do not skip it.
Variations
- Chocolate Chip Blondies: Replace the butterscotch morsels with semi-sweet chocolate chips and the toffee bits with chopped walnuts for a classic blondie with extra crunch.
- Salted Caramel Blondies: Swirl in 1/4 cup of caramel sauce before baking and top with extra sea salt. The caramel creates gooey pockets throughout.
- Peanut Butter Blondies: Stir 1/3 cup of creamy peanut butter into the batter along with the eggs. Use peanut butter chips instead of butterscotch for a double dose.
- Coconut Toffee Blondies: Add 1/2 cup of toasted shredded coconut along with the toffee bits. The coconut adds a chewy texture and tropical flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or warm briefly before serving.
- Freezer
- Freeze the blondies in an airtight container or freezer bag for up to 3 months. Thaw at room temperature or warm in the microwave for 15 seconds.
- Reheat
- Warm individual blondies in the microwave for 10-15 seconds, or in a 300°F oven for 5-8 minutes to refresh the crust.
Store the blondies in an airtight container at room temperature for up to 4 days. Layer them with parchment paper to prevent sticking. For longer storage, wrap them individually in plastic wrap and place in a freezer bag.
The brown butter can be made up to 3 days ahead and stored in the refrigerator. Let it come to room temperature before using. The baked blondies can be made a day ahead and stored in an airtight container; they actually taste even better the next day as the flavors meld.
Serving ideas
Serve the blondies slightly warm for the best texture — the butterscotch chips will be melty and the toffee bits chewy.
A sprinkle of extra sea salt right before serving adds a fresh pop of flavor. Pair them with a scoop of vanilla ice cream for a decadent dessert, or enjoy them with a cup of coffee or tea.
For a neat presentation, cut the blondies into squares with a sharp knife, wiping the blade between cuts.
Arrange them on a platter and dust with a little powdered sugar if desired, though the shiny crust is beautiful on its own. These are perfect for bake sales, potlucks, or a simple afternoon treat.

Brown Butter Butterscotch Toffee Blondies with Shiny Crust

Ingredients
- 1 cup unsalted butter
- 2 cups dark brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup butterscotch morsels
- 1/2 cup crushed English toffee bits
- Maldon sea salt flakes, for finishing, to taste
Instructions
- Place the butter in a medium saucepan over medium heat. Cook, stirring frequently, until the butter melts, foams, and then turns a deep amber brown with a nutty aroma, about 5 to 7 minutes. Remove from heat immediately and let cool slightly.
- In a large bowl, whisk the warm brown butter with the dark brown sugar until well combined. Add the eggs one at a time, whisking thoroughly after each, then stir in the vanilla extract.
- Sprinkle the flour and salt over the wet mixture. Fold gently with a rubber spatula until just combined and no streaks of flour remain.
- Add the butterscotch morsels and crushed toffee bits to the batter. Fold gently with the spatula until evenly distributed throughout the batter.
- Line a 9x9-inch baking pan with parchment paper, leaving overhang on two sides. Scrape the batter into the pan and spread it into an even layer.
- Bake in a preheated 350°F (175°C) oven for 22 minutes, or until the top is shiny and golden brown and the edges are slightly crispy. The center should be just set — a toothpick inserted near the center should come out with moist crumbs, not wet batter.
- Let the blondies cool in the pan on a wire rack for at least 10 minutes. Sprinkle with Maldon sea salt flakes while still warm. Use the parchment overhang to lift the blondies out, then cut into squares.
