Before you start

Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with butter or nonstick spray. Have all ingredients at room temperature: the butter for browning, the egg, and the cookie dough if it's refrigerated.

Measure out the cocoa powder, sugar, flour, and salt. If using homemade cookie dough, prepare it ahead of time and chill it until ready to use.

Ingredients at a glance (10)
  • 1/2 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup semisweet chocolate chips (for brownie batter)
  • 1 1/2 cups chocolate chip cookie dough (store-bought or homemade)
  • flaky sea salt, for sprinkling, to taste

Instructions

Brown Butter & Batter

  1. Brown the Butter
In a small saucepan over medium heat, melt the butter. Continue cooking, swirling the pan frequently, until the butter turns a deep golden brown and smells nutty, about 5-7 minutes. Remove from heat and let cool slightly.
Look for The butter will foam, then subside, and the milk solids will turn amber.
Tip Watch closely—brown butter can go from perfect to burnt quickly.
  2. Mix Brownie Batter
In a medium bowl, whisk the browned butter with cocoa powder, sugar, egg, and vanilla until smooth and glossy. Add the flour and salt, and stir until just combined. Fold in the chocolate chips.
Look for The batter will be thick and shiny, with no dry streaks.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Do not overmix—the batter should be just combined for a fudgy texture.

The butter should be a deep golden brown with a nutty aroma. The brownie batter will be thick, glossy, and slightly warm from the butter. It should smell rich and chocolatey. The cookie dough should be at room temperature for easy scooping.

Fill & Bake

  1. Fill Muffin Cups
Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin. Spoon about 1 tablespoon of brownie batter into each cup, spreading it to cover the bottom.
Look for The brownie layer should be about 1/4 inch thick.
Tip Use a small cookie scoop for neat, even portions.
  2. Top with Cookie Dough
Scoop a rounded tablespoon of chocolate chip cookie dough onto each brownie layer, pressing gently to flatten.
Look for The cookie dough should cover most of the brownie layer.
Tip If using store-bought dough, let it sit at room temperature for 10 minutes to soften.
  3. Bake the Brookie Cups
Bake in the preheated oven for 14 minutes, until the edges are deep golden brown and the tops are set. The centers will look slightly moist but not raw.
Look for The edges will caramelize and pull away slightly from the muffin tin.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip A toothpick inserted into the cookie top should come out with a few moist crumbs, not wet batter.

The muffin cups will be filled with a layer of brownie batter and a scoop of cookie dough. As they bake, the edges will caramelize and turn deep golden brown.

The kitchen will smell of toasted butter and chocolate. The tops will look set but slightly soft in the center.

Cool & Serve

  1. Cool and Sprinkle
Remove the muffin tin from the oven and let the brookie cups cool in the tin for 5 minutes. Transfer to a wire rack and sprinkle immediately with flaky sea salt.
Look for The salt will stick to the warm, slightly glossy tops.
Tip Cooling in the tin helps the cups set without breaking.
  2. Serve Warm
Serve the brookie cups warm for the best gooey texture. Pull them apart to reveal the fudgy brownie bottom and melted chocolate.
Look for The center should be gooey but not raw, and the edges crisp.
Tip Warm them for a few seconds in the microwave if they have cooled.

After cooling, the brookie cups will have slightly domed tops and crisp edges. When pulled apart, the brownie layer will be gooey and fudgy, and the cookie layer chewy. The flaky sea salt adds a final crunch and salty contrast.

Common mistakes

One common mistake is overbaking, which dries out the brownie layer and makes the cookie top hard. Watch the time carefully—14 minutes is usually perfect. Another issue is underbaking the brownie batter, which can happen if the spoonful is too thick.

Make sure the brownie layer is evenly spread across the bottom of each cup. Also, do not overmix the brownie batter; overmixing develops gluten and makes it cakey instead of fudgy.

How to tell it’s done

The brookie cups are done when the edges are deep golden brown and the tops are set but still slightly soft to the touch. A toothpick inserted into the cookie top should come out with a few moist crumbs, not wet batter.

The brownie layer will be fully cooked when the internal temperature reaches 160°F (71°C) for food safety. Let them cool for 5 minutes in the tin before removing.

  • Egg dishes: 160°F (71°C) in the thickest part
