Before you start
Take the pizza dough out of the refrigerator 30 minutes before you plan to roll it, so it comes to room temperature and is easier to stretch.
Prepare the spiced ground beef filling ahead of time: cook ground beef with finely chopped onions and peppers, season with salt, pepper, and your favorite spices (such as paprika, cumin, or oregano), and let it cool slightly. Shred the cheeses and set out all other ingredients. Heat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Ingredients at a glance (10)
- 1 lb store-bought pizza dough, at room temperature
- all-purpose flour, for dusting, to taste
- 2 tbsp tomato sauce
- 400 g cooked spiced ground beef with onions and peppers
- 1 cup shredded mozzarella cheese
- 1 cup shredded kaşar cheese
- 1 egg yolk, beaten
- 1 tsp black nigella seeds
- 1 tsp toasted sesame seeds
- 2 red kapya pepper strips
Instructions
Assemble the Filling and Cut Strips
- Prepare the Dough and FillingOn a lightly floured surface, roll the pizza dough into a large rectangle about 1/4-inch thick. Transfer to a parchment-lined baking sheet. Spread the tomato sauce in a thick band down the center of the dough, leaving the outer flaps empty. Evenly scatter the cooked spiced ground beef mixture over the sauce, then mound the shredded mozzarella and kaşar cheese over the meat.Look for The filling should form a neat, even strip down the middle, about 3 inches wide.Tip Keep the filling away from the edges so the dough strips can seal properly.
- Cut the Dough StripsUsing a pastry wheel or sharp knife, cut diagonal strips along both empty outer dough flaps, about 1 inch apart, angling them from the filling outward. You should have an equal number of strips on each side, like the ribs of a leaf.Look for The strips should be even in width so the braid looks uniform.Tip If the dough sticks, dust the surface with a little more flour.
The dough should be rolled into a large rectangle, with the tomato sauce, beef, and cheeses mounded in a thick band down the center. The outer flaps should be cut into even diagonal strips, about 1 inch apart.
The filling should be neatly contained, and the strips should look uniform. This is the time to adjust the filling if it's too thick or too thin.
Braid, Brush, and Top
- Braid the RollFold the dough strips diagonally over the cheese and meat filling in a criss-cross braid, alternating from left and right, overlapping each strip slightly. Tuck the ends of the dough underneath the roll to seal. Press the red kapya pepper strips decoratively across the top grooves of the braid.Look for The braid should look like a woven pattern with the filling peeking through.Tip Tuck the last strip firmly to prevent it from unrolling during baking.
- Brush and Sprinkle ToppingBrush the entire braided surface with the beaten egg yolk. Sprinkle the black nigella seeds and toasted sesame seeds evenly over the top, pressing them gently so they adhere.Look for The roll should be glossy and speckled with seeds.Tip Use a light hand with the egg wash so it doesn't pool in the crevices.
The braid should look like a woven pattern with the filling peeking through the gaps. The surface should be glossy from the egg wash and evenly sprinkled with nigella and sesame seeds. The red pepper strips should be pressed gently into the grooves. The roll should look neat and inviting, with the filling securely enclosed.
Bake and Slice
- Bake the RollHeat the oven to 375°F (190°C). Bake the braided roll for 22 minutes, until deeply caramelized and golden-brown. The internal temperature of the filling should reach 160°F (71°C) for the ground beef. If the top browns too quickly, tent loosely with foil.Look for The crust should be deep golden brown and the cheese visibly bubbling at the edges.Safe temperature 160°F (71°C) internal temperature (ground meat)Tip Let the roll rest for 5 minutes before slicing to let the cheese set slightly.
- Slice and ServeTransfer the baked roll to a cutting board. Slice into thick portions with a chef's knife, revealing the molten cheese and juicy beef filling. Serve warm, with the steam rising from each slice.Look for The cheese should pull in long ribbons when sliced.Tip Use a serrated knife for cleaner cuts through the crust.
The roll should be deeply golden brown and the cheese bubbling at the edges. The internal temperature of the filling should be 160°F (71°C). When sliced, the cheese should pull in long ribbons and the meat should be juicy. The crust should be crisp, and the steam should rise from each slice.
Common mistakes
One common mistake is overfilling the dough, which makes braiding difficult and can cause the filling to spill out during baking. Keep the filling in a neat, even strip and leave enough dough on the sides for the strips.
Another mistake is not sealing the ends properly — tuck the ends under the roll to prevent the cheese from leaking out. Also, be careful not to over-bake, as the cheese can become tough and the crust too dark. Check the roll at 20 minutes and adjust the time as needed.
How to tell it’s done
The roll is done when the crust is deeply golden brown and the cheese is visibly bubbling at the edges. The internal temperature of the filling should reach 160°F (71°C) for the ground beef. If the top browns too quickly, tent with foil for the last 5 minutes.
Let the roll rest for 5 minutes before slicing; this allows the cheese to set slightly and makes for cleaner slices. The steam rising from the cut pieces is a good indicator that the filling is hot throughout.
