Tips for success
For the most flavorful gravy, choose a mushroom-bourbon gravy that isn't too salty—the beef and butter add their own seasoning.
If the gravy seems thin at the end, remove the lid and cook on HIGH for 15–20 minutes to let it reduce. You can also whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, then simmer for 5 minutes to thicken.
To make the dish even richer, add a splash of heavy cream or a spoonful of sour cream just before serving. If you prefer a deeper mushroom flavor, add a few dried porcini mushrooms to the pot along with the fresh portobellos.
The dish is forgiving—you can swap the shallots for pearl onions or use baby bella mushrooms if portobellos aren't available.
Variations
- Swap the protein: Use cubed sirloin, chuck, or even pork shoulder instead of ribeye. Adjust cooking time as needed—pork may need a bit longer to become tender. The bourbon gravy works with any rich meat.
- Add vegetables: Add thick-cut carrots or parsnips along with the mushrooms for extra sweetness and color. Root vegetables hold up well to long cooking and absorb the gravy beautifully.
- Spicy kick: Add a diced jalapeño or a pinch of red pepper flakes to the slow cooker before cooking. The heat will mellow during cooking, leaving a subtle warmth that complements the bourbon.
- Creamy version: Stir in 1/2 cup heavy cream or a dollop of sour cream just before serving. This turns the gravy into a rich, creamy mushroom sauce that's perfect over egg noodles.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a splash of water or broth to loosen the gravy if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of water or beef broth if the gravy has thickened too much.
The beef may become more tender on reheating, which is fine. Always cool leftovers to room temperature within 2 hours of cooking and refrigerate promptly.
You can assemble the uncooked ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook as directed.
If you do this, add 30–45 minutes to the cooking time because the ingredients start cold. Alternatively, cook the dish fully, then cool and refrigerate for up to 3 days; reheat gently before serving.
Serving ideas
Serve this bourbon gravy ribeye over fluffy white rice to soak up the rich sauce. The rice provides a neutral base that lets the beef and gravy shine. For a low-carb option, serve over cauliflower rice or alongside steamed green beans. A side of crusty bread is also excellent for dipping into the gravy.
Garnish with a sprinkle of fresh parsley or thyme if you like, though the dish is delicious as is. The sweet shallots and meaty mushrooms are a perfect match for the tender beef. This is a hearty, satisfying meal that works for both casual weeknights and special dinners. Pair with a glass of bourbon or a robust red wine, if desired.

Slow-Cooker Bourbon Gravy Portobello Ribeye Bites

Ingredients
- 2 lb well-marbled ribeye steak, cut into 1-inch cubes
- 8 oz portobello mushroom caps, thickly sliced
- 6 shallots, peeled and halved
- 1 1/2 cups mushroom-bourbon gravy (store-bought or homemade)
- 4 tbsp salted butter, cut into pats
- Fluffy white rice, for serving
Instructions
- Place the cubed ribeye bites in the bottom of a 6- to 7-quart slow cooker in an even layer. Scatter the thickly sliced portobello mushroom caps and the peeled, halved shallots over the beef. Pour the mushroom-bourbon gravy over everything, then dot the top with the pats of salted butter. Do not stir.
- Cover the slow cooker with the lid. Cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and the mushrooms are silky. The gravy will darken and thicken slightly as the beef releases its juices.
- After the minimum cooking time, use tongs to lift a piece of beef from the center of the slow cooker. It should be very tender and easily pull apart with a fork. If not, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the warm gravy for at least 3 minutes before serving. This allows the juices to redistribute and ensures each bite is moist and tender.
- Spoon fluffy white rice onto serving plates. Ladle the beef, mushrooms, shallots, and plenty of bourbon gravy over the rice. Serve hot, ensuring each plate gets a generous portion of the glossy sauce.
