Tips for success
For extra crispy potato skins, rub the potatoes with a little oil and salt before baking. This helps the skins crisp up and adds flavor.
If you prefer a more intense birria flavor, reduce the consommé slightly before ladling to concentrate the taste. You can also mix some of the consommé into the mashed potato for an even richer base.
When broiling, position the oven rack about 6 inches from the heat source to get a good char without burning. If you don't have a broiler, you can bake the potatoes at 475°F (246°C) for a few minutes until the cheese melts and browns.
Let the potatoes rest for a minute after broiling to allow the cheese to set slightly, making them easier to handle.
Variations
- Chicken Birria Potatoes: Substitute the shredded beef with shredded chicken cooked in birria sauce. Use the same consommé and cheese. The chicken will be lighter but still flavorful.
- Vegetarian Birria Potatoes: Replace the beef with a hearty mixture of roasted mushrooms and black beans, seasoned with birria spices. Use vegetable consommé and skip the meat for a satisfying meatless version.
- Spicy Chorizo Potatoes: Swap the birria beef with cooked Mexican chorizo. The chorizo adds a spicy, savory kick that pairs well with the cheese and consommé. Adjust the spice level to taste.
- BBQ Pulled Pork Potatoes: Use pulled pork tossed in barbecue sauce instead of birria beef. Replace the consommé with a smoky barbecue sauce thinned with broth for a Southern twist.

Leftover stuffed potatoes can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a baking dish, cover with foil, and warm in a 350°F (175°C) oven until heated through.
Add a little extra consommé or broth to keep them moist. The potatoes can also be reheated in the microwave, though the skins may soften.
The baked potatoes can be prepared up to 2 days ahead. After baking and mashing, store the filled (but not broiled) potatoes in the refrigerator. When ready to serve, broil as directed, adding a few extra minutes to heat through. The consommé can also be made ahead and refrigerated; reheat gently before serving.
Serving ideas
Serve the birria stuffed potatoes immediately after broiling, with the hot consommé ladled over the top. A dollop of sour cream and a sprinkle of fresh cilantro add brightness and a cooling contrast to the rich, spicy beef. Pair with a simple green salad or a side of pickled onions for a complete meal.
For a fun twist, serve the potatoes with extra consommé in a small bowl for dipping, just like traditional birria tacos. You can also offer lime wedges and hot sauce on the side for those who want extra zing.
This dish is hearty enough to be a main course on its own, but it also works well as a indulgent side for a larger spread.

Birria Stuffed Baked Potatoes with Melted Cheese & Consommé

Ingredients
- 4 large russet potatoes
- 4 tbsp butter
- 1 tsp sea salt
- 1/4 cup heavy cream
- 2 cups shredded birria beef
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded Oaxaca cheese
- 2 cups birria consommé
- 1/2 cup sour cream
- 1/4 cup fresh cilantro leaves
Instructions
- Heat the oven to 425°F (220°C). Scrub the potatoes and prick them with a fork. Bake directly on the oven rack for about 60 minutes, until the skins are crisp and the insides are tender. Let them cool slightly, then slice each potato in half lengthwise. Carefully scoop the fluffy flesh into a bowl, leaving a thin layer attached to the skin to keep the jackets sturdy. Mash the potato with butter, sea salt, and heavy cream until smooth and creamy.
- Spoon the mashed potato mixture back into the potato skins, mounding it slightly. Divide the shredded birria beef evenly among the potato halves, pressing it gently into the mashed potato. Top each with a generous amount of shredded cheddar and Oaxaca cheese, covering the beef completely.
- Place the filled potatoes on a broiler-safe baking sheet. Set the oven to broil on high. Broil for about 5 minutes, watching closely, until the cheese is melted, bubbly, and blistered in spots. The edges of the potato skins may char slightly, which adds flavor.
- Remove the potatoes from the broiler. Immediately ladle hot birria consommé over the top of each potato, letting it soak into the cheese and beef. Add a dollop of sour cream and a sprinkle of fresh cilantro. Serve hot, with extra consommé on the side for dipping or pouring. Let it rest for 3 minutes before slicing.
