Before you start

Before starting, ensure your oven is fully preheated to 375°F (190°C). Have your shredded pork ready to go, and ensure your cornbread batter is prepared according to your preferred recipe.

Having all ingredients measured and organized on your counter will make the assembly process seamless and quick, allowing you to focus on getting the casserole into the oven as efficiently as possible.

Ingredients at a glance (4)
  • 2 lb shredded cooked pork
  • 1 1/2 cups barbecue sauce
  • 2 cups cornbread batter
  • 1 cup shredded cheddar cheese

Instructions

Building the flavor base

  1. Prepare the base
Preheat the oven to 375°F (190°C). Spread the shredded cooked pork evenly across the bottom of a 9x13 inch ceramic baking dish. Pour the barbecue sauce in ribbons over the pork and mix gently to coat evenly.
Look for The pork is fully coated in sauce.
Tip Ensure the pork is at room temperature before spreading to ensure even heating.

The pork should be evenly distributed and thoroughly coated with the barbecue sauce. The mixture should look moist and glossy, filling the bottom of the dish without any dry patches. Ensure the sauce is spread to the very edges of the pan so that the pork remains succulent during the entire baking process.

Adding the cornbread layer

  1. Prepare the topping
In a large mixing bowl, combine the cornbread batter with the shredded cheddar cheese. Fold the cheese into the batter until well combined. Pour the mixture over the pork and barbecue sauce layer, smoothing the top with a spatula.
Look for The batter is spread to the corners.
Tip Do not overmix the batter to keep the cornbread light and fluffy.

The batter should be thick enough to hold the cheese but pourable enough to spread easily. Once poured, it should completely cover the pork layer. Smooth the surface with a spatula to ensure an even bake, making sure the edges are sealed so the cornbread cooks uniformly with the pork underneath.

Achieving the golden crust

  1. Bake the casserole
Place the dish in the preheated oven and bake for 35 minutes until the top is golden brown and the edges are bubbling. Ensure the internal temperature of the pork reaches 145°F (63°C) and let it rest for 5 minutes before serving.
Look for The top is golden brown and firm.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Cover loosely with foil if the top browns too quickly.

The casserole is ready when the top is a deep, rich golden yellow and feels springy when pressed gently in the center. The sauce should be bubbling vigorously around the edges of the pan.

The kitchen should smell like toasted corn and savory barbecue, signaling that the dish is perfectly baked and ready to rest.

Common mistakes

Avoid overmixing the cornbread batter once the cheese is added, as this can lead to a dense and tough texture. Also, ensure the pork is spread in an even layer to prevent some areas from cooking faster than others.

Do not overcrowd the dish, as this will prevent the cornbread from rising properly and may result in an unevenly baked casserole that is gummy in the center.

How to tell it’s done

The casserole is done when the cornbread topping is firm to the touch and golden brown across the entire surface. The edges should be bubbling with the barbecue sauce, indicating that the bottom layer is heated through.

The pork should reach an internal temperature of at least 145°F (63°C). Always allow the dish to rest for at least 5 minutes before slicing to ensure the layers set properly.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
