Before you start

Before you start, make sure your snow crab clusters are thawed if they were frozen. Pat the shrimp dry with paper towels so they sear better and don't water down the sauce.

Slice the lemons thinly and measure out the capers, wine, and Cajun butter. Have the slow cooker ready and the rice cooked or started, since it takes about 20 minutes. This recipe is all about assembly, so a little prep makes the process smooth.

Ingredients at a glance (9)
  • 2 lb snow crab leg clusters
  • 2 lb raw jumbo shrimp, peeled and deveined
  • 2 Meyer lemons, thinly sliced
  • 3 tbsp capers, drained
  • 1/2 cup dry white wine
  • 1/2 cup spiced Cajun butter, melted
  • 2 tbsp fresh lemon juice
  • 3 cups cooked white jasmine rice
  • Lemon wedges, for serving

Instructions

Layer and Top

  1. Layer the Seafood
Place the snow crab leg clusters and the raw jumbo shrimp in the bottom of a 6-quart slow cooker. Arrange them in an even layer so they cook evenly.
Look for The crab and shrimp should cover the bottom of the slow cooker in a single layer.
Tip If the crab legs are frozen, thaw them in the refrigerator overnight before adding.
  2. Add Citrus and Aromatics
Scatter the Meyer lemon slices and capers over the seafood. Pour the white wine around the edges of the slow cooker.
Look for The lemon slices should be nestled among the crab and shrimp.
Tip Use a dry white wine like Sauvignon Blanc or Pinot Grigio.
  3. Top with Cajun Butter and Lemon Juice
Drizzle the melted spiced Cajun butter and the fresh lemon juice evenly over the seafood and aromatics.
Look for The butter should coat the top of the seafood.
Tip If the butter solidifies, warm it gently before pouring.

At this stage, the slow cooker is filled with raw seafood, lemon slices, capers, wine, and butter. The colors are vibrant: pink shrimp, red crab, bright yellow lemon, and deep red butter.

The butter may be partially solidified if it cooled, but it will melt as the cooker heats. The ingredients should be evenly distributed so every piece gets coated in the sauce.

Slow Cook

  1. Slow Cook on Low
Cover the slow cooker and cook on low for 3 to 4 hours, until the shrimp are pink and opaque and the crab is heated through.
Look for The sauce should be bubbling gently around the edges.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Check the Shrimp
After 3 hours, check the shrimp: they should be curled, pink, and opaque. The crab should be hot and the meat easily pulls away from the shell.
Look for Shrimp should be firm to the touch and no longer translucent.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip If the shrimp are not done, cook for another 30 minutes and check again.

After 3 to 4 hours, the slow cooker is bubbling gently, and a fragrant steam rises when you lift the lid. The sauce has turned a rich crimson, and the shrimp are pink and curled. The crab legs are bright red-orange, and the lemon slices have softened. The aroma is garlicky, buttery, and briny. Check that the shrimp are opaque and the crab is hot.

Scoop and Serve

  1. Scoop and Serve
Using a slotted spoon, lift the crab and shrimp from the slow cooker, letting the butter sauce drip back. Serve over steamed jasmine rice with lemon wedges on the side.
Look for The seafood should be glistening with the red butter sauce.
Tip Spoon extra sauce over the rice for extra flavor.

When you lift the slotted spoon, you'll see tender crab and shrimp dripping with glossy butter sauce. The sauce has thickened slightly and coats the seafood beautifully. The rice is fluffy and ready to soak up the extra sauce. The lemon wedges add a fresh, bright contrast. The dish looks like a seafood boil but elegant enough for a dinner party.

Common mistakes

One common mistake is cooking the seafood too long, which turns shrimp rubbery and crab mushy. Set a timer and check at the 3-hour mark. Another is lifting the lid repeatedly, which releases heat and extends cooking time.

Also, don't skip the wine or lemon—they balance the richness of the butter and keep the dish from feeling heavy. Finally, make sure the shrimp are in a single layer so they cook evenly.

How to tell it’s done

The dish is done when the shrimp are pink and opaque, and the crab is heated through. The internal temperature of the thickest part of the shrimp and crab should reach 145°F (63°C).

The sauce should be bubbling gently and the butter fully melted, with the lemon slices softened and the capers plumped. The seafood will be tender, not rubbery, and the flavors will have melded into a savory, tangy, buttery sauce.

  • Shellfish: 145°F (63°C) in the thickest part
