Before you start
Before you start, make sure the snow crab legs are thawed if they were frozen. Peel and devein the shrimp, and smash the garlic cloves. Measure the butter sauce and lemon juice.
If you're using a 7-quart slow cooker, the ingredients will fit comfortably. Have the rice cooked and ready for serving. Set out the serving platter and slotted spoon so you can scoop the seafood out easily when it's done.
Ingredients at a glance (8)
- 2 lb snow crab leg clusters
- 2 lb raw jumbo shrimp, peeled and deveined
- 2 cups frozen sweet corn kernels
- 12 cloves garlic, smashed
- 1 cup melted Cajun garlic-paprika butter
- 1/4 cup fresh lemon juice
- steamed white jasmine rice, for serving
- lemon wedges, for serving
Instructions
Layer and Pour
- Layer the SeafoodPlace the snow crab leg clusters and raw jumbo shrimp in the bottom of a 7-quart slow cooker. Spread them out evenly so they cook uniformly.Look for The crab and shrimp should cover the bottom of the insert in a single layer.Tip If the crab legs are frozen, thaw them in the refrigerator overnight before adding.
- Scatter Corn and GarlicScatter the frozen sweet corn kernels and smashed garlic cloves over the seafood. The garlic will soften and mellow as it cooks.Look for The corn and garlic should be evenly distributed over the seafood.Tip Smashed garlic cloves release more flavor than whole cloves.
- Pour Over the Cajun ButterPour the melted Cajun garlic-paprika butter and fresh lemon juice over the top. Use a spoon to gently coat the seafood and corn with the sauce.Look for The sauce should pool around the seafood, coating the corn and garlic.Tip If the butter solidifies, warm it gently before pouring.
The slow cooker insert is filled with layers of snow crab, shrimp, corn, and garlic. The melted butter sauce is poured over the top, pooling around the seafood and glistening. The garlic cloves are scattered among the corn, and the lemon juice adds a fresh scent.
The raw ingredients look vibrant—the shrimp are translucent, the crab is pale, and the corn is bright yellow. Everything is covered with the crimson butter sauce, ready to cook.
Slow Cook
- Slow Cook Until TenderCover the slow cooker and cook on LOW for 3 hours, or until the shrimp are pink and opaque and the crab is heated through. Do not stir during cooking to keep the crab legs intact.Look for The sauce should be bubbling gently around the edges, and the shrimp should be pink and curled.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip Check the shrimp at the 2 1/2-hour mark—they cook faster than crab.
After 3 hours on LOW, the sauce is bubbling gently around the edges. The shrimp are pink and curled, and the crab legs are steaming. The corn is tender, and the garlic cloves have softened into a mellow, sweet version of themselves. The kitchen smells richly of garlic, butter, and spice. The seafood is fully cooked and the sauce has thickened slightly, coating the ingredients.
Scoop and Serve
- Scoop and ServeUsing a slotted spoon, lift the seafood, corn, and garlic out of the butter sauce and onto a serving platter or individual plates. Serve hot with steamed jasmine rice and lemon wedges on the side.Look for The seafood should be glistening with butter sauce, and the corn tender.Tip Reserve the extra butter sauce for drizzling over rice.
Using a slotted spoon, the seafood, corn, and garlic are lifted out of the butter sauce onto a platter. The crab clusters are intact, the shrimp are plump, and the corn glistens with sauce. The garlic cloves are soft and spreadable. Serve with steamed jasmine rice and lemon wedges. The extra butter sauce can be spooned over the rice for extra flavor.
Common mistakes
One common mistake is overcooking the shrimp, which makes them rubbery. Check them at the 2 1/2-hour mark, especially if your slow cooker runs hot. Another is using frozen crab without thawing, which can water down the sauce.
Thaw the crab in the refrigerator overnight. Avoid stirring the pot during cooking, as that can break the crab legs into pieces. Finally, don't skip the lemon juice—it brightens the rich butter and prevents the dish from feeling heavy.
How to tell it’s done
The dish is done when the shrimp are pink and opaque throughout and the crab is heated through. The internal temperature of the shrimp should reach 145°F (63°C). The corn should be tender and the garlic soft.
The sauce will be bubbling gently around the edges. If you're unsure, cut into a shrimp—it should be firm and white in the center, not translucent. The crab legs should be steaming and easy to crack.
- Shellfish: 145°F (63°C) in the thickest part
