Tips for success
For the best flavor, use a good-quality smoked paprika and fresh garlic. The butter should be melted but not hot, so it doesn't cook the shrimp before they go into the slow cooker.
If you have time, let the shrimp sit in the seasoned butter for 10 minutes before cooking to let the flavors penetrate.
Serve this over steamed jasmine rice, grits, or crusty bread to soak up the sauce. A side of sautéed greens or a simple green salad would round out the meal.
Garnish with fresh parsley or sliced green onions if you like, though the video doesn't show them.
Variations
- Spicy Andouille: Add sliced andouille sausage along with the shrimp for a heartier dish. The sausage adds smoky, spicy flavor and makes it more of a one-pot meal. Cook as directed; the sausage is already cooked, so it just needs to heat through.
- Extra Veggies: Add diced zucchini, mushrooms, or cherry tomatoes along with the bell peppers and onions. These vegetables cook quickly and add more color and texture. Adjust the amount of butter if you add a lot of extra vegetables.
- Creamy Version: Stir in 1/2 cup of heavy cream or coconut milk during the last 15 minutes of cooking to make a creamy sauce. This tones down the spice and adds richness. For a dairy-free option, use full-fat coconut milk.
- Citrus Herb: Add the zest of one lemon and a few sprigs of fresh thyme or oregano to the butter sauce. This brightens the flavor and adds an herby note. Remove the herb sprigs before serving.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken slightly when chilled.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a skillet over low heat or in the microwave in 30-second bursts, stirring frequently. Avoid boiling to keep the shrimp tender.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The shrimp will continue to absorb flavor, but they may become softer.
Reheat gently in a skillet over low heat or in the microwave in 30-second bursts, just until warmed through. Avoid boiling, which can toughen the shrimp.
You can prep the vegetables and the butter sauce a day ahead. Keep them in separate containers in the refrigerator. When ready to cook, layer everything in the slow cooker as directed. This makes the morning routine even easier.
Serving ideas
Serve the shrimp and vegetables over steamed jasmine rice to soak up the buttery sauce. The rice's neutral flavor balances the spicy, rich sauce.
Add lemon wedges on the side so everyone can squeeze fresh lemon juice over their portion, which brightens the dish and cuts through the richness.
This dish also works well over creamy grits or with crusty bread for dipping. For a low-carb option, serve it over cauliflower rice or a bed of greens. The sauce is the star, so make sure to include plenty of it when serving.
