Before you start

Before beginning, ensure all your ingredients are measured and ready on the counter. Preheat your oven to 375°F (190°C) so it reaches the target temperature by the time the pasta is drained.

Clear enough space on your workspace to comfortably toss the pasta with the sauce, and have your casserole dish positioned near the stove to minimize movement with hot, heavy pans.

Ingredients at a glance (4)
  • 1 lb penne pasta
  • 24 oz tomato sauce
  • 4 oz sliced pepperoni
  • 2 cups shredded mozzarella cheese

Instructions

Boiling the pasta

  1. Boil the pasta
Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package directions until al dente. Drain the pasta thoroughly using a colander and set aside.
Look for pasta is tender but still has a slight bite
Tip do not overcook the pasta as it will soften further in the oven

The pasta should be cooked just until al dente, meaning it still has a firm center when bitten. Drain it thoroughly to remove excess water, which could otherwise dilute the tomato sauce and prevent the final bake from thickening properly. Once drained, the pasta is ready to be combined with the sauce for the next stage.

Assembling the components

  1. Assemble the bake
Preheat your oven to 375°F (190°C). In a large casserole dish, combine the cooked penne with the tomato sauce, ensuring the pasta is evenly coated. Stir in half of the pepperoni slices and half of the shredded mozzarella cheese. Spread the mixture into an even layer.
Look for pasta is completely coated in red sauce
Tip use a sturdy spoon to mix everything directly in the dish to save on cleanup

Ensure the pasta is thoroughly coated with the tomato sauce, which should look vibrant and glossy. The mixture of cheese and pepperoni should be distributed evenly throughout the dish to ensure every scoop provides a balanced bite.

Check that the surface is level before adding the final layer of cheese and pepperoni to ensure even browning during the baking process.

Baking until golden

  1. Bake and serve
Top the pasta with the remaining mozzarella and pepperoni. Place the dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbling. Remove from the oven and let it rest for 5 minutes before serving.
Look for cheese is golden brown and bubbling
Tip placing the dish on a baking sheet prevents spills in your oven

The dish is ready when the cheese is melted, slightly browned in spots, and bubbling vigorously around the edges of the casserole dish. The aroma of roasted tomatoes and melted cheese should be prominent. Carefully remove it from the oven and let it sit for 5 minutes, which allows the structure to set so you can serve clean, distinct portions.

Common mistakes

A common mistake is overcooking the pasta during the boiling stage. Since the pasta continues to cook in the oven with the hot sauce, it is crucial to pull it from the boiling water while it is still firm.

Another error involves using too little sauce; if the pasta looks dry before entering the oven, add a small splash of water or extra sauce to maintain the desired moisture levels.

How to tell it’s done

The dish is considered done when the cheese on top has fully melted and is bubbling throughout. The edges should show signs of the sauce beginning to caramelize, and the entire casserole should be piping hot in the center.

Allow it to rest for at least 5 minutes before serving, as this helps the sauce settle and makes it easier to scoop portions without the layers sliding apart.
