Before you start

Before you begin cooking, ensure all your ingredients are measured and ready to go. Take the pizza dough out of the refrigerator at least thirty minutes prior to rolling so it can warm to room temperature, making it much easier to shape.

Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius) and line a large baking sheet with parchment paper. Cook the ground beef in a skillet, drain any excess grease thoroughly, and let the meat cool slightly so it does not melt the cheese prematurely during assembly.

Ingredients at a glance (5)
  • 1 lb ground beef
  • 1 lb pizza dough, store-bought or made ahead
  • 2 cups shredded mozzarella cheese
  • 3 oz pepperoni slices
  • 1 cup marinara sauce, for serving

Instructions

Searing the Beef Filling

  1. Cook the Beef Filling
Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon as it cooks. Cook the beef, stirring occasionally, until it is entirely browned and no pink remains. Ensure the internal temperature of the ground beef reaches at least 160°F (71°C) to guarantee food safety. Once cooked, carefully drain all excess grease from the skillet and transfer the beef to a bowl to cool slightly.
Look for The beef is fully browned with no pink remaining.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Draining the excess grease thoroughly is crucial to keep the crust from becoming soggy.

At the end of this first phase, the ground beef should be fully browned, crumbled, and completely cooked through. The meat will sizzle gently in the skillet. Ensure that there is no pink remaining and that you have drained all excess liquid and grease from the pan before setting the beef aside to cool slightly.

Rolling and Braising the Dough

  1. Roll and Cut the Dough
On a sheet of parchment paper, roll the room-temperature pizza dough into a large rectangle, approximately twelve by fifteen inches. Use a sharp knife or a pastry cutter to cut diagonal strips, about one inch wide and three inches long, along both of the long sides of the rectangle, leaving a solid three-inch-wide column running down the exact center of the dough for the fillings.
Look for The dough is rolled to an even thickness with clean diagonal cuts on both sides.
Tip Letting the dough rest at room temperature makes it much easier to roll without it snapping back.
  2. Layer the Cheese and Beef Fillings
Spread half of the shredded mozzarella cheese down the center column of the pizza dough. Evenly layer the cooked and cooled ground beef over the cheese layer. Top the ground beef with the remaining shredded mozzarella cheese, pressing down gently to compact the filling so it remains secure during the braiding process.
Look for The fillings are neatly stacked in the center column of the dough.
Tip Keep the fillings centered to ensure the braided strips can fully wrap around them.
  3. Braid the Dough Over the Filling
Braid the dough by folding the top and bottom borders inward over the filling. Next, alternate folding the diagonal dough strips from each side over the center, overlapping them in a crisscross pattern to completely enclose the beef and cheese. Carefully transfer the parchment paper with the braided loaf onto a large baking sheet.
Look for The loaf is neatly braided and fully encloses the beef and cheese filling.
Tip Pinch the ends of the strips slightly to seal them so the cheese does not leak out.

By the end of this phase, the dough should be rolled into a neat rectangle with diagonal strips cut along both long sides.

The center will be layered with beef and shredded mozzarella, and the strips will be neatly braided over the filling. The assembled loaf should look uniform and snug, ready to be transferred to the prepared baking sheet.

Baking to Golden Perfection

  1. Bake and Serve the Pizza Bread
Preheat the oven to 400°F (204°C). Top the braided dough with the pepperoni slices and a light sprinkle of mozzarella if desired. Bake in the preheated oven for twenty to twenty-five minutes, until the crust is a rich golden brown and the cheese is bubbling and melted. Let the baked pizza bread rest for ten minutes, then slice and serve warm with marinara sauce.
Look for The crust is deep golden brown and the cheese is bubbling under the pepperoni.
Tip Letting the bread rest before slicing ensures the cheese sets slightly and does not run out.

At the end of the final phase, the pizza bread will emerge from the oven boasting a deep golden-brown crust. The mozzarella on top will be bubbly and slightly browned, and the pepperoni slices will be crisp and slightly cupped at the edges. When gently tapped, the crust should sound hollow, indicating that the dough is fully baked through.

Common mistakes

One of the most common mistakes is failing to drain the cooked ground beef before adding it to the dough. Excess grease will saturate the bottom crust, preventing it from baking properly and leading to a soggy, greasy texture.

Another error is overfilling the center of the dough; too much filling makes it difficult to braid the dough tightly, causing the cheese to leak out during baking and leaving you with an empty, collapsed loaf.

How to tell it’s done

To determine if the pizza bread is fully cooked, look for a deep golden-brown crust and bubbling cheese.

The safest way to verify doneness is to insert an instant-read thermometer into the center of the loaf; the internal temperature of the ground beef filling must reach at least 160 degrees Fahrenheit (71 degrees Celsius) to ensure it is completely safe to consume. Let the bread rest for ten minutes before slicing.

  • Ground meat: 160°F (71°C) in the thickest part
