Tips for success
For the best texture, slice the eggplant into uniform thick rounds so they cook at the same rate. If some slices are thinner, they may become too soft.
Use a large spoon to scoop the eggplant and meatballs from the baking dish, making sure to get some of the sauce from the bottom. The sauce is the best part—don't leave it behind.
To achieve a deeper caramelization on the meatballs, you can briefly broil the dish for the last 2-3 minutes of baking, but watch it carefully to avoid burning.
If you prefer a spicier dish, add more red pepper flakes or a pinch of cayenne to the meat mixture. The recipe is forgiving, so feel free to adjust the seasoning to your taste.
Variations
- Lamb and Mint: Replace the ground beef with ground lamb and add 1 tablespoon of chopped fresh mint to the meat mixture. The mint complements the lamb and adds a fresh note to the rich dish.
- Spicy Turkish Version: Increase the red pepper flakes to 1 1/2 teaspoons and add 1/2 teaspoon of Aleppo pepper to the meat mixture. For extra heat, drizzle a little chili oil over the finished dish before serving.
- Vegetarian Option: Omit the meatballs and double the eggplant, or add thick slices of zucchini and bell pepper. Increase the tomato sauce to 1 1/2 cups and bake for 35-40 minutes until the vegetables are tender.
- Cheese-Topped: During the last 10 minutes of baking, sprinkle 1/2 cup of shredded mozzarella or crumbled feta over the top. Continue baking until the cheese is melted and bubbly. Note: this adds dairy and may not be suitable for those avoiding milk.
Storage and make-ahead

- Freezer
- This dish freezes well for up to 3 months. Cool completely, then transfer to a freezer-safe container. Thaw overnight in the refrigerator before reheating.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making it even better the next day. Reheat gently in the microwave or in a 350°F (175°C) oven until warmed through, adding a splash of water if the sauce has thickened too much.
The meatball mixture can be prepared up to a day in advance and kept covered in the refrigerator. The eggplant slices can also be seasoned and stored in the fridge for a few hours before assembling.
Assemble the dish completely, cover, and refrigerate for up to 24 hours; then add 10-15 minutes to the baking time if baking straight from the fridge.
Serving ideas
Serve this baked kebab hot, straight from the oven. It pairs wonderfully with fluffy rice, bulgur pilaf, or warm crusty bread to soak up the savory tomato sauce.
A simple green salad with lemon and herbs adds a fresh contrast. For a more substantial meal, serve alongside creamy yogurt or a dollop of plain Greek yogurt on the side, which balances the richness.
For a family-style presentation, bring the baking dish to the table and let everyone serve themselves. Garnish with a sprinkle of fresh parsley or a few extra red pepper flakes if desired. The dish is satisfying on its own, but you can also serve it with roasted vegetables or a simple cucumber-tomato salad for a complete meal.

Baked Eggplant and Meatball Kebab: One-Pan Turkish Dinner

Ingredients
- 3 large eggplants, sliced into thick rounds
- 2 tbsp olive oil
- 1 tsp sweet paprika
- 1 tsp salt
- 500 g ground beef
- 1 medium onion, grated
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp red pepper flakes
- black pepper, to taste
- 1 tbsp tomato paste
- 1 cup warm water
Instructions
- Heat the oven to 400°F (200°C). Slice the eggplants into thick rounds, about 1/2-inch thick. In a large bowl, toss the eggplant slices with the olive oil, sweet paprika, and salt until evenly coated. In a separate bowl, combine the ground beef, grated onion, minced garlic, cumin, red pepper flakes, and a few grinds of black pepper. Mix gently with your hands until just combined; do not overwork. Shape the mixture into flat, round patties, about 3 inches wide and 1/2-inch thick.
- Arrange the eggplant rounds and the meat patties alternately in concentric circles in a large round baking dish. Place them snugly but not overlapping. The pattern should look like a sunburst, with the patties filling the gaps between the eggplant slices.
- In a small bowl, dissolve the tomato paste in the warm water. Stir until the paste is fully incorporated and the liquid is a uniform red. Pour the tomato sauce evenly over the arranged eggplant and meatballs, making sure to moisten all the pieces.
- Cover the baking dish with a sheet of parchment paper that has been crumpled and then smoothed out, or use a lid or foil. Press the parchment down so it touches the surface of the food. Place the dish in the oven and bake for 40 minutes, until the eggplant is tender and the meatballs are cooked through.
- Carefully remove the parchment paper from the hot dish. The eggplant should be deeply caramelized on the edges, and the meatballs should be browned and sizzling. Scoop a generous portion onto plates, making sure to include some of the rich tomato sauce from the bottom of the dish. Serve hot, with crusty bread or rice if desired.
