Before you start

Before you begin, ensure all ingredients are measured and ready on your workspace. Preheat your oven to 375°F (190°C) early so it reaches the target temperature before you slide the meatloaf in.

Have your parchment paper cut to size and your baking sheet prepared. Keeping the beef refrigerated until the last minute will help it handle better during the shaping process, ensuring the loaf maintains its structure during the assembly and weaving steps.

Ingredients at a glance (6)
  • 2 lbs ground beef
  • 8 oz mozzarella cheese, sliced or shredded
  • 1/2 cup red bell peppers, diced
  • 8 slices bacon
  • fresh parsley, for serving
  • breadcrumbs, for serving

Instructions

Meatloaf Preparation

  1. Prepare the Meatloaf Base
In a large mixing bowl, combine the ground beef with desired seasonings. Mix until just combined, being careful not to overwork the meat to ensure a tender texture after baking. Shape the seasoned meat into a flat rectangle on a piece of parchment paper to prepare for the filling.
Look for The meat mixture should be uniform and hold its shape when pressed.
Tip Keep the ground beef cold until the moment you start mixing to maintain the best fat consistency.

The meat should be shaped into a smooth, even rectangle on the parchment paper. The surface should be flat enough to hold the cheese and peppers without them rolling off. If the meat feels too warm, place it in the refrigerator for a few minutes before proceeding to the filling phase to make it easier to roll.

Stuffing and Weaving

  1. Assemble and Wrap
Distribute the mozzarella cheese and diced red bell peppers evenly over the center of the meat rectangle. Carefully roll the meat into a log, sealing the edges tightly to enclose the filling. Weave the bacon slices over the top of the meatloaf, tucking the ends underneath to secure them in place.
Look for The bacon should cover the entire surface of the meatloaf evenly.
Tip If the bacon slices are too short, stretch them slightly with the flat side of a knife before weaving.

The cheese and peppers should be distributed evenly, leaving a small border at the edges to ensure a tight seal. When rolling, tuck the sides firmly to create a sturdy log. The bacon weave should be secure and cover the entire top surface, with the ends tucked underneath to prevent them from curling during the baking process.

Baking and Garnish

  1. Bake and Serve
Preheat the oven to 375°F (190°C). Place the meatloaf on a baking sheet and cook until the bacon is crispy and the internal temperature reaches 160°F (71°C) for the ground meat. Remove from the oven, garnish with fresh parsley and breadcrumbs, and let it rest before slicing.
Look for The bacon should be golden brown and crispy, and the meat cooked through.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a meat thermometer inserted into the center to ensure the temperature is reached safely.

At the end of the baking phase, the bacon should be perfectly rendered and crispy to the touch. The meatloaf should feel firm but springy.

After removing from the oven, garnish immediately with fresh parsley and breadcrumbs for a pop of color and texture. Let the meat rest for at least 10 minutes to allow the juices to redistribute.

Common mistakes

Avoid over-mixing the ground beef, which can lead to a tough and rubbery texture. Handle the meat gently when shaping the rectangle to keep the fibers loose.

Another common error is failing to seal the edges properly, which allows the cheese to leak out during cooking. Ensure the bacon is woven tightly enough to hold the loaf together, but do not overlap it too much, or it will not crisp evenly.

How to tell it’s done

The meatloaf is fully cooked when the bacon is golden brown and crispy, and the internal temperature of the meat has reached at least 160°F (71°C).

Use an instant-read thermometer inserted into the thickest part of the meat to confirm the temperature. The juices should run clear, and the cheese center should be fully melted and bubbly when you slice into the loaf after its resting period.

  • Ground meat: 160°F (71°C) in the thickest part
