Tips for success

For an extra layer of flavor, mix finely chopped fresh herbs like parsley or chives into the ground beef before stuffing the onions. This adds a pop of freshness that cuts through the richness of the bacon and cheese. You can also sprinkle a little bit of smoked paprika over the bacon before baking to enhance the smoky profile.

If you prefer a sweeter glaze, mix a teaspoon of honey or maple syrup into your barbecue sauce before brushing it onto the onion bombs. This will help the sauce caramelize even better and provide a nice contrast to the salty bacon. Always watch the oven closely during the final glazing step, as sugars in the sauce can burn quickly.

Variations

  • Spicy BBQ Onion Bombs: Add a tablespoon of finely chopped jalapeño peppers to the ground beef mixture and use a spicy barbecue sauce for the glaze to add heat.
  • Savory Herb Onion Bombs: Incorporate fresh thyme, rosemary, and minced garlic into the beef mixture for an earthy, aromatic twist that pairs wonderfully with the sweet roasted onions.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure they are cooled to room temperature within 2 hours of cooking before refrigerating.
Freezer
Not recommended for freezing, as the texture of the onions and the crispy bacon will suffer upon thawing and reheating.
Reheat
Reheat in a 350°F (175°C) oven for 10-15 minutes until warmed through and the bacon regains some of its crispiness.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To maintain the best texture, keep the onion bombs separate from any additional sauce until you are ready to reheat them.

If stored properly, the bacon will remain relatively crisp, though it may soften slightly as it absorbs moisture from the onions over time.

You can prepare the stuffed onion bombs up to 24 hours in advance and keep them in the refrigerator until you are ready to bake. Simply cover the tray tightly with plastic wrap to prevent the onions from drying out.

When you are ready to cook, remove them from the fridge about 15 minutes before baking to bring them closer to room temperature for more even cooking.

Serving ideas

Serve these onion bombs warm as an appetizer, perhaps alongside a simple side of cool ranch dressing or a crisp green salad to balance the richness.

They are substantial enough to be served individually on small plates, or you can place them on a large platter for guests to help themselves. Ensure you provide a fork and knife, as they are quite filling and can be messy to eat by hand.

For a casual presentation, place the onion bombs on a wooden board and garnish with a sprinkle of fresh chopped scallions or parsley. The contrast between the dark, caramelized barbecue glaze and the bright green herbs makes for a visually appealing dish.

Because they are rich, pairing them with something acidic or crunchy, such as pickled vegetables, will help cleanse the palate between bites.

Frequently asked questions

Can these onion bombs be made with other types of meat?
Yes, ground turkey or ground pork can be used instead of ground beef. If using leaner ground turkey, ensure you cook it to 165°F (74°C) to ensure it is safe and cooked through.
Why is it important to rest the onion bombs after baking?
Resting allows the juices within the ground beef to redistribute, which ensures the meat stays moist and flavorful when you cut into it. It also helps the cheese set slightly so it does not run out completely.
How can the bacon be prevented from falling off during baking?
Secure the ends of the bacon slices with toothpicks to ensure they stay wrapped around the onion shell. Remember to remove the toothpicks before serving to the guests.

Ingredients

  • 4 large yellow onions, peeled and halved
  • 1 lb ground beef
  • 4 oz cheddar cheese, cubed
  • 8 slices bacon
  • 1/2 cup barbecue sauce

Instructions

  1. Peel the onions and carefully remove the center layers, leaving two or three outer layers to form a shell. In a mixing bowl, season the ground beef with salt and pepper to taste, then pack a portion of the beef into each onion shell, pressing a cube of cheddar cheese into the center of the meat.
  2. Wrap each stuffed onion bomb with two slices of bacon, securing the ends with toothpicks if necessary. Place the bombs on a parchment-lined baking sheet and bake in a preheated oven at 375°F (190°C) for 30 minutes, or until the bacon is crispy and the beef is cooked through to 160°F (71°C).
  3. Remove the baking sheet from the oven and brush the onion bombs generously with the barbecue sauce. Return to the oven for an additional 5 minutes to caramelize the glaze. Remove from the oven, let rest for 5 minutes, and serve warm while the cheese is still gooey and melted.
