Tips for success
To achieve the shatteringly crispy texture, make sure the dough is stretched as thin as possible without tearing. If the dough keeps springing back, let it rest for a few more minutes.
Brushing each layer with oil before stacking helps keep them separate and promotes flakiness. When assembling, press the edges firmly to seal, but avoid pressing too hard on the filling, as it can make the dough soggy.
For even browning, rotate the baking sheet halfway through the baking time. If the pastries are browning too quickly on top but not on the bottom, move them to a lower rack.
Letting them rest for 5 minutes after baking is crucial—it allows the steam to escape, making the layers crispier. Serve warm for the best experience, as the contrast between the hot, juicy filling and the cool, crisp pastry is unbeatable.
Variations
- Spicy Kaytaz: Add 1 teaspoon of red pepper flakes or a finely chopped fresh chili to the filling for a spicy kick. The heat pairs well with the sweetness of the pomegranate molasses.
- Cheese and Herb: Replace the meat filling with a mixture of crumbled feta, chopped parsley, and a little black pepper. This vegetarian version is creamy and bright, with a salty tang.
- Lamb and Mint: Substitute ground lamb for the beef and add 2 tablespoons of chopped fresh mint to the filling. The mint adds a refreshing note that complements the lamb beautifully.
- Chicken and Cinnamon: Use ground chicken and add 1/2 teaspoon of ground cinnamon and a pinch of allspice to the filling. This aromatic twist is subtly sweet and warming, perfect for a cozy meal.
Storage and make-ahead
- Fridge
- Store cooled pastries in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 8–10 minutes to restore crispness.
- Freezer
- Freeze unbaked pastries on a baking sheet, then transfer to a freezer bag for up to 3 months. Bake from frozen at 400°F (200°C) for 30–35 minutes.
- Reheat
- To reheat frozen baked pastries, place them in a 350°F (175°C) oven for 10–12 minutes, or until hot and crispy.
Store leftover kaytaz böreği in an airtight container at room temperature for up to 2 days. To reheat, place them on a baking sheet in a 350°F (175°C) oven for 5–7 minutes, until crisp and heated through. Avoid microwaving, as it will make the pastry soggy.
You can prepare the filling up to 2 days ahead and keep it refrigerated. The dough can also be made a day ahead; wrap it tightly in plastic wrap and refrigerate.
Let it come to room temperature before stretching. Assembled but unbaked pastries can be refrigerated for up to 4 hours before baking; just add a few minutes to the baking time.
Serving ideas
Serve the kaytaz böreği warm, as the crispness is at its peak. They make a fantastic appetizer, snack, or light dinner alongside a fresh salad. For a traditional touch, offer a side of plain yogurt or a simple garlic-yogurt sauce to balance the richness. The tangy yogurt complements the sweet-savory filling beautifully.
These pastries are also wonderful for gatherings—they can be made smaller as finger food. Pair them with a glass of ayran (a yogurt drink) or a robust red wine.
The flaky texture and bold flavors are sure to impress. If you have leftovers, they're still delicious at room temperature, but nothing beats the just-baked experience.

Authentic Hatay Kaytaz Böreği: Crispy Spiced Meat Pastry

Ingredients
- 4 cups all-purpose flour
- 1 1/2 cups water
- 1 tsp kosher salt
- 1/2 cup vegetable oil, for stretching and brushing
- 1 lb ground beef
- 1 medium onion, finely chopped
- 2 tbsp tomato paste
- 2 tbsp pomegranate molasses
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- In a large bowl, combine the flour, water, and salt. Knead until a firm, elastic dough forms, about 8 minutes. Cover with a damp cloth and let rest for 15 minutes. Divide the dough into 12 equal balls and keep them covered.
- On a lightly oiled surface, take one dough ball and brush it with oil. Using a rolling pin, roll it out as thin as possible, then gently stretch with your hands until it is translucent and almost see-through. Repeat with remaining balls, stacking them with oiled parchment between each.
- In a skillet over medium-high heat, cook the ground beef with the chopped onion until the beef is browned and the onion is soft, about 8 minutes. Stir in the tomato paste, pomegranate molasses, black pepper, and salt. Cook for 2 more minutes, then remove from heat and let cool slightly.
- Lay one stretched dough sheet on a clean surface. Place a generous spoonful of the meat filling in the center. Fold the dough over the filling, pleating the edges as you go to create a round, flat pastry. Press the edges to seal. Repeat with the remaining dough and filling.
- Preheat the oven to 400°F (200°C). Place the pastries on a parchment-lined baking sheet. Brush the tops with oil. Bake for 25–30 minutes, until deep golden brown and flaky. Let rest for 5 minutes before serving.
