Before you start

Before you begin cooking, measure out all of your ingredients to ensure a smooth assembly process. Bring a large pot of salted water to a boil for the pasta. Ensure your ground beef is completely thawed if it was frozen.

Prepare your baking dish by lightly greasing it with cooking spray or oil, and preheat your oven to 375°F (190°C) so it is ready for baking as soon as the layers are assembled.

Ingredients at a glance (4)
  • 12 oz tubular pasta
  • 1.5 lb ground beef
  • 1 tsp ground cinnamon
  • 3 cups thick white béchamel sauce (store-bought or made ahead)

Instructions

Prepare the Pasta and Cinnamon Beef

  1. Boil the Tubular Pasta
Bring a large pot of salted water to a boil over high heat. Add the tubular pasta and cook until it is just al dente, about 8 to 10 minutes. Drain the pasta thoroughly in a colander and set it aside to cool slightly before assembling the dish.
Look for The pasta should be tender but still retain a firm, structural bite in the center.
Tip Do not rinse the cooked pasta, as the natural surface starches help the layers adhere to one another.
  2. Brown and Simmer the Cinnamon Beef
Heat a large skillet over medium-high heat. Add the ground beef and ground cinnamon. Cook, breaking up the meat with a wooden spoon, until the beef is completely browned and cooked through to a safe internal temperature of 160°F (71°C). Drain any excess grease from the skillet.
Look for The beef should be finely crumbled, fragrant with cinnamon, and show no remaining pink color.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain the browned beef thoroughly to prevent any excess oil from making the pasta layers soggy.

By the end of this initial phase, the tubular pasta should be boiled to a perfect al dente texture and drained completely. The ground beef must be fully browned and fragrant with the warm aroma of cinnamon, with all excess grease drained from the skillet. Having these two foundational components ready and dry is essential for building clean, distinct layers.

Assemble the Layers with Béchamel

  1. Layer the Pasta and Spiced Beef
Arrange the cooked tubular pasta in an even, aligned layer at the bottom of the baking dish. Spread the simmered cinnamon ground beef evenly over the pasta layer, pressing down gently with a spatula to create a flat, compact surface.
Look for The pasta and beef layers should be flat, uniform, and tightly packed in the dish.
Tip Aligning the pasta tubes in the same direction makes the final sliced portions look incredibly neat.
  2. Spread the Creamy Béchamel
Pour the thick white béchamel sauce evenly over the spiced beef layer. Use a spatula to smooth the top surface, ensuring the creamy sauce completely covers the beef and reaches all the edges and corners of the baking dish.
Look for The béchamel should form a thick, smooth, and completely unbroken white blanket over the beef.
Tip Ensure the béchamel is spread all the way to the edges of the dish to seal in the steam.

At this point, the pasta and cinnamon beef should be neatly layered in the baking dish, and the thick white béchamel sauce must be spread evenly over the top. The surface should be completely smooth, with the béchamel sealing the beef layer entirely. Ensure there are no exposed areas of meat, which could dry out during the baking process.

Bake, Rest, and Set

  1. Bake and Rest the Pastitsio
Place the assembled baking dish in the oven preheated to 375°F (190°C). Bake for 35 to 40 minutes until the top crust is golden-brown and sizzling. Remove from the oven and let the dish rest on a wire rack for at least 30 minutes before slicing.
Look for The top should develop deep golden patches and the edges should bubble actively.
Tip Resting is crucial; slicing too early will cause the creamy layers to slide apart and collapse.

The pastitsio is finished when the top has developed a gorgeous, deeply caramelized golden-brown crust with beautiful dark patches. Sizzling juices should gently bubble around the edges of the baking dish.

It is absolutely crucial to let the hot casserole rest on a wire rack for at least 30 minutes before serving, allowing the layers to set into perfect slices.

Common mistakes

The most common mistake when making pastitsio is slicing the dish immediately after pulling it out of the oven. While the aroma is irresistible, the hot béchamel and pasta layers need time to cool slightly and solidify.

Slicing too early results in a messy, unstructured plate. Another frequent error is leaving too much moisture in the beef; if the meat is not drained well, the excess grease will seep into the pasta layer, making the bottom soggy.

How to tell it’s done

You can tell your pastitsio is perfectly baked when the béchamel topping has set completely and developed a beautiful golden-brown, blistered crust. The edges of the baking dish should be bubbling actively.

To ensure food safety, the internal temperature of the ground beef must reach 160°F (71°C). Insert an instant-read thermometer into the center of the dish to verify this temperature before removing it from the oven.

  • Ground meat: 160°F (71°C) in the thickest part
