Before you start

Before beginning the assembly, organize all your ingredients and equipment to ensure a smooth cooking process. Have your cooked tubular pasta fully drained and ready. Measure out your ground beef, sauce, and velvety béchamel.

Preheat your oven to the correct temperature and grease your baking dish. Having everything prepared and within reach allows you to focus on building the perfect, neat layers without any stress, ensuring a beautiful and successful pastitsio.

Ingredients at a glance (4)
  • 12 oz cooked tubular pasta
  • 1 1/2 lb ground beef
  • 15 oz sauce
  • 3 cups velvety béchamel, store-bought or made ahead

Instructions

Preparing the Savory Meat Sauce

  1. Simmer the Ground Beef in Sauce
In a large skillet over medium heat, add the ground beef and cook until completely browned, breaking it up with a spoon. Ensure the ground beef reaches a safe internal temperature of 160°F (71°C). Stir in the sauce and simmer on low heat for about 10 to 15 minutes, allowing the flavors to meld and the mixture to thicken into a rich, spiced meat sauce with no excess liquid.
Look for The meat sauce should be very thick with no standing liquid.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Browning the beef thoroughly adds deep savory flavor to the sauce.

At the end of this phase, the ground beef should be fully browned and simmered in the sauce until thick and fragrant.

There should be no standing liquid in the skillet, ensuring the sauce is concentrated and won't make the pasta soggy. The cooked tubular pasta should be fully drained and ready for layering.

Assembling the Structured Layers

  1. Layer the Pasta
Preheat the oven to 375°F (190°C). Lightly grease a deep baking dish. Place the cooked tubular pasta into the bottom of the dish, carefully aligning the tubes in a uniform direction to create a neat, structured base. Press down gently with your hands or a spatula to compact the pasta layer, which helps the slices hold their shape perfectly later.
Look for The pasta should form a flat, compact layer at the bottom.
Tip Aligning the tubes neatly makes for beautiful slices.
  2. Spread the Beef and Bechamel
Spread the simmered ground beef and sauce mixture evenly over the aligned pasta layer. Use a spatula to press the meat down firmly, creating a tight, solid layer. Next, pour the velvety béchamel over the meat, spreading it smooth right to the edges of the dish to completely seal the layers and create a flat, pristine top.
Look for The béchamel should completely cover the meat layer.
Tip Make sure the béchamel touches the edges of the pan to seal the layers.

The pastitsio is now fully assembled in the baking dish. The bottom layer consists of neatly aligned, compacted pasta tubes, topped with an even, firmly pressed layer of the spiced meat sauce. The velvety béchamel completely covers the meat, spread smooth and sealed tightly against the edges of the dish.

Baking, Browning, and Resting

  1. Bake Until Golden and Set
Bake the assembled pastitsio in the preheated oven for 40 to 45 minutes. Watch for the top to turn a beautiful, bubbly, golden-brown color with deep caramelized spots. The edges should bubble vigorously, indicating that the entire casserole is heated through and the velvety béchamel layer has set into a stable, custard-like topping.
Look for The top should have dark golden spots and bubbly edges.
Tip If the top browns too quickly, tent the dish loosely with foil.
  2. Rest and Slice
Remove the pastitsio from the oven and place it on a heat-safe surface. Let the casserole rest at room temperature for at least 30 to 45 minutes before slicing. This resting period is absolutely essential, as it allows the pasta, meat, and béchamel layers to cool slightly and firm up, ensuring clean, defined square slices.
Look for The casserole should feel firm and hold its shape when sliced.
Tip Use a sharp knife and wipe it clean between cuts for perfect slices.

The baked pastitsio features a gorgeous, bubbly, golden-brown crust. After resting at room temperature for at least 30 minutes, the casserole will feel firm to the touch. The layers will be perfectly set, allowing you to slice clean, tall, defined squares that showcase the beautiful pasta tubes and meat layers.

Common mistakes

One of the most common mistakes is slicing the pastitsio immediately after removing it from the oven. When hot, the velvety béchamel and meat layers are still semi-liquid and will slide apart, turning your beautiful layered casserole into a messy pile on the plate.

Another mistake is leaving too much liquid in the meat sauce, which seeps into the pasta and makes the bottom layer soggy and structurally weak.

How to tell it’s done

The pastitsio is perfectly done when the top béchamel layer is bubbly and has developed a beautiful golden-brown crust with dark spots. To ensure food safety, the ground beef layer must reach an internal temperature of 160°F (71°C).

You can insert an instant-read thermometer into the center of the casserole to verify. The dish must also rest for 30 to 45 minutes to set completely.

  • Ground meat: 160°F (71°C) in the thickest part
