Tips for success
For a highly organized presentation, take the time to align the bucatini pasta side-by-side in a single direction along the bottom of the baking dish.
While this step requires a bit of patience, it creates the classic, striking striped appearance when the pastitsio is sliced and served. It also ensures a more uniform texture, as the pasta forms a tight, cohesive bed that supports the heavy meat and béchamel layers above.
When using pre-made or store-bought béchamel, make sure it is at room temperature or slightly warmed before pouring. Cold béchamel can be too stiff to spread evenly, which might disturb the neatly aligned beef layer underneath. Gently smoothing it with an offset spatula ensures a perfectly flat, professional-looking top layer that browns beautifully.
Variations
- Lamb Pastitsio: Substitute the spiced minced beef with spiced minced lamb for a richer, more traditional gamey flavor profile.
- Vegetarian Lentil Pastitsio: Replace the spiced minced beef with cooked brown lentils simmered with warm spices for a hearty, meat-free alternative.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze baked slices wrapped in plastic and foil in an airtight container for up to 3 months.
- Reheat
- Reheat individual slices in the microwave for 2 minutes, or bake covered with foil at 350°F (175°C) for 20 minutes.
Allow any leftovers to cool completely at room temperature for no more than two hours to prevent bacterial growth. Cover the baking dish tightly with plastic wrap or aluminum foil, or transfer individual slices to airtight containers.
Store the pastitsio in the refrigerator for up to four days. The layers will continue to firm up as they chill, making cold leftovers exceptionally easy to slice cleanly.
Pastitsio is an excellent make-ahead dish. Assemble the entire casserole, let it cool to room temperature for no more than two hours to ensure food safety, and cover it tightly with plastic wrap.
Store it in the refrigerator for up to 24 hours before baking. When ready to serve, remove the plastic wrap, cover with foil, and bake at 375°F (190°C) for 20 minutes, then uncover and bake for an additional 30 to 40 minutes until hot and golden.
Serving ideas
Serve pastitsio warm, but not boiling hot, to maintain its beautiful layered structure. A crisp, refreshing Greek salad dressed with red wine vinegar and extra virgin olive oil makes the perfect accompaniment.
The bright acidity of tomatoes, cucumbers, kalamata olives, and red onions cuts through the rich, creamy texture of the baked pasta and savory meat sauce, balancing the meal beautifully.
For an authentic touch, serve each tall slice on a simple plate alongside warm crusty bread. Garnish the plate with a light sprinkle of fresh oregano or chopped parsley to add a pop of color and a fresh, herbal aroma that elevates the presentation.

Authentic Greek Pastitsio with Golden Béchamel Crust

Ingredients
- 1 lb bucatini pasta
- 1 1/2 lbs spiced minced beef
- 3 cups thick white béchamel sauce, store-bought or made ahead
- 1 cup golden cheese, shredded
Instructions
- Bring a large pot of salted water to a boil. Cook the bucatini pasta until al dente. Drain the pasta thoroughly and set it aside to cool slightly before assembling.
- Heat a large skillet over medium-high heat. Add the spiced minced beef and cook, breaking it up with a spoon, until it is fully browned and cooked through, reaching a safe internal temperature of 160°F (71°C).
- Arrange the cooked bucatini pasta in a neat, tightly aligned layer along the bottom of a greased 9x13-inch baking dish. Spread the cooked spiced minced beef evenly over the pasta layer to form a flat, compact layer.
- Pour the thick white béchamel sauce evenly over the beef layer, smoothing the surface with a spatula to cover the entire casserole.
- Sprinkle the golden cheese evenly over the béchamel layer. Bake at 375°F (190°C) for 40 to 45 minutes until the top is golden brown and blistered. Let the pastitsio rest for 20 minutes before slicing.
