Before you start

Before beginning the assembly, preheat your oven to 425°F (218°C) to ensure a consistent baking temperature. Have all ingredients prepared and within reach. Ensure the mozzarella is sliced or shredded uniformly to allow for even melting.

If using a pre-made crust, ensure it is at room temperature for easier handling and pressing into the pan, which prevents the dough from snapping back during the initial shaping process.

Ingredients at a glance (4)
  • 400 grams butter-crust dough
  • 1 lb mozzarella cheese, sliced or shredded
  • 1 1/2 cups chunky oregano tomato sauce
  • 1/4 cup grated parmesan cheese

Instructions

Dough preparation

  1. Prepare the crust
Press the 400 grams of butter-crust dough firmly into the bottom and up the sides of a deep-dish pizza pan. Ensure the dough is even to create that signature deep-dish wall.
Look for dough covers pan sides
Tip Use floured hands to prevent sticking.

The dough should be pressed evenly, reaching up the sides of the pan to create a uniform wall. The surface of the dough should be smooth and free of large air bubbles before filling, ensuring a consistent crust thickness that will bake evenly in the high heat of the oven.

Baking process

  1. Layer and bake
Fill the crust with a thick layer of mozzarella cheese. Seal the top with a thin layer of remaining dough. Bake at 425°F (218°C) until the crust is golden brown and the cheese is fully melted and blistering.
Look for crust is golden brown
Tip Check the center of the pizza to ensure the cheese is molten.

The pizza is ready to move to the final stage when the top dough layer is puffed and golden. A pleasant, toasted aroma should fill the kitchen, indicating that the butter in the crust has caramelized and the cheese inside has reached a molten, gooey consistency throughout the entire depth.

Finishing and serving

  1. Finish and serve
Ladle the chunky oregano tomato sauce over the top layer of the crust. Sprinkle generously with parmesan cheese. Allow to rest for 10 minutes before lifting a slice with a pie server.
Look for sauce is warm and fragrant
Tip Wait for the rest period so the cheese holds its structure.

The final checkpoint is the addition of the chunky tomato sauce and parmesan. The sauce should be distributed in an even layer across the top of the crust.

Once the parmesan is added, the pizza should look vibrant, with the red sauce contrasting beautifully against the golden-brown crust and white melted cheese.

Common mistakes

Avoid overfilling the pizza with too much sauce, which can cause the top crust to become soft or waterlogged. Another common mistake is failing to allow the pizza to rest after removing it from the oven.

Resting is essential for the cheese to set slightly, allowing for a clean slice and the iconic cheese pull without the contents spilling out immediately upon serving.

How to tell it’s done

The pizza is done when the crust has achieved a deep, golden-brown color and the edges are firm to the touch.

The internal cheese should be completely melted and bubbling, which can be checked by inserting a small knife into the center to feel for resistance. Ensure the top dough seal is fully cooked and crisp to support the weight of the tomato sauce topping.
