Tips for success
For a deeper flavor, you can briefly sear the chicken thighs in a pan before adding them to the slow cooker, though this is optional. This extra step helps render some fat and adds a browned crust that contributes to the final texture of the glaze.
If the sauce remains too thin after three hours of cooking, you can remove the chicken and set the slow cooker to high for an additional 15 minutes to reduce the liquid further.
Alternatively, transfer the liquid to a small saucepan and simmer on the stove until it thickens to your preference.
Variations
- Spicy Three-Cup Chicken: Add two or three dried red chili peppers during the layering phase to infuse the sauce with a subtle, warming heat that complements the savory glaze.
- Vegetable Addition: Include sliced shiitake mushrooms or bamboo shoots during the last hour of cooking to add earthy texture and absorb the flavorful braising liquid.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 2 months.
- Reheat
- Reheat in a microwave or on the stovetop until the chicken reaches 165°F (74°C) throughout.
Store any leftovers in an airtight container in the refrigerator for up to three days. Ensure the chicken and sauce are cooled to room temperature within two hours of cooking before transferring them to the fridge to maintain food safety and quality.
This dish is excellent for make-ahead meals, as the flavors often deepen after sitting in the refrigerator overnight.
Prepare the dish as instructed, then reheat gently when ready to serve. The basil is best added fresh upon serving, so you may want to keep extra on hand for a fresh garnish.
Serving ideas
Serve this dish hot, spooning plenty of the sticky, caramelized sauce over steamed short-grain rice.
The rice acts as a neutral canvas that absorbs the intense flavors of the sesame-soy glaze, balancing the richness of the chicken and the pungency of the confit garlic.
Consider serving a side of blanched bok choy or stir-fried seasonal greens to add freshness and texture to the meal.
The contrast between the tender, savory chicken and crisp, vibrant vegetables creates a well-rounded dining experience that highlights the best of Taiwanese home-style cooking.

Aromatic Taiwanese Three-Cup Chicken Slow-Cooker Style

Ingredients
- 2 lb bone-in chicken thighs
- 1/4 cup black sesame oil
- 1/4 cup Shaoxing rice wine
- 1/4 cup soy sauce
- 2 tbsp rock sugar
- 1 piece ginger, sliced into coins
- 10 cloves garlic cloves
- 1 cup fresh Thai basil
Instructions
- Place the bone-in chicken thighs into the bottom of the slow cooker insert. Add the ginger coins, peeled garlic cloves, and rock sugar. Pour the black sesame oil, Shaoxing rice wine, and soy sauce over the chicken.
- Cover the slow cooker with the lid and set it to the high heat setting. Cook the chicken for three hours. The goal is for the sauce to reduce into a thick, dark caramel lacquer that coats the chicken pieces thoroughly.
- Once the cooking time is complete and the chicken has reached an internal temperature of 165°F (74°C), remove the lid. Fold in the fresh Thai basil leaves. Let the residual heat wilt the basil for about two minutes before serving immediately over steamed short-grain rice.
