Before you start

Before you start, measure out the apricot preserves and BBQ sauce, and dice the onion. No need to brown the chicken or sauté anything — this recipe is truly dump-and-go.

Pat the chicken thighs dry with paper towels to help the sauce cling, and place them in the slow cooker in a single layer. Have your serving dish and rice ready for when the cooking time is up.

Ingredients at a glance (4)
  • 2 lb boneless skinless chicken thighs
  • 1 cup apricot preserves
  • 1 medium Vidalia onion, diced
  • 1 cup hickory brown-sugar BBQ sauce

Instructions

The Dump

  1. Layer the Chicken
Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Spread them out evenly so they cook uniformly.
Look for The chicken covers the bottom of the crock in one even layer.
Tip Pat the chicken dry with paper towels before adding to help the sauce cling.
  2. Add the Onion
Scatter the diced Vidalia onion over the chicken, spreading it evenly so every piece gets some sweetness as it cooks.
Look for The onion pieces are scattered across the chicken surface.
Tip Dice the onion into small, even pieces so they melt into the sauce.
  3. Spoon on the Preserves
Spoon the apricot preserves over the chicken and onion, dolloping it in several places so it spreads as it heats.
Look for Golden preserves sit in glossy mounds over the chicken.
Tip If the preserves are thick, warm them for a few seconds to make them easier to spread.
  4. Pour Over the BBQ Sauce
Pour the hickory BBQ sauce evenly over everything, using a spoon or spatula to gently spread it so the chicken is mostly covered.
Look for The sauce forms a rich, dark layer over the chicken and onions.
Tip Don't stir — the layers will meld as they cook.

At the end of this phase, the slow cooker contains raw chicken thighs topped with diced onion, spoonfuls of apricot preserves, and a layer of BBQ sauce.

The colors are distinct — golden preserves, deep red sauce, and pale chicken. The aroma is already sweet and smoky. Everything is in place for the slow cooking to begin.

The Slow Simmer

  1. Cook Low and Slow
Cover the slow cooker and cook on LOW for 6 hours, or until the chicken is fork-tender and reaches 165°F (74°C) in the thickest part. Avoid lifting the lid during cooking to keep the heat steady.
Look for The sauce is bubbling gently around the edges and the chicken is tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cooking on LOW keeps the chicken moist; HIGH can toughen it.
  2. Shred the Chicken
Using two forks, gently shred the chicken thighs right in the slow cooker, stirring to coat every piece with the sticky apricot-hickory sauce. The meat should pull apart easily.
Look for The chicken shreds easily and the sauce clings to each piece.
Tip For larger chunks, shred less; for finer shreds, use a fork in each hand.

After 6 hours on low, the chicken is fork-tender and the sauce is bubbling gently around the edges. The kitchen smells richly of caramelized sugar and hickory smoke. The sauce has darkened and thickened, and the chicken is glistening with a sticky glaze. A quick temperature check confirms it's reached 165°F (74°C).

The Serve

  1. Serve Over Rice
Spoon the shredded chicken and sauce over steamed jasmine rice, using a slotted spoon to control the amount of sauce. Serve hot, with extra sauce spooned on top if desired.
Look for The chicken is glossy and coated with thick, caramelized sauce.
Tip The sauce thickens as it sits; add a splash of water if it gets too sticky.

The shredded chicken is coated in a thick, glossy sauce with ribbons of melted onion and apricot. It piles beautifully onto rice, and the sauce clings to every bite. The texture is tender and pull-apart, with a sweet-tangy flavor that balances smoke and fruit. Serve hot, with extra sauce spooned over the top.

Common mistakes

One common mistake is lifting the lid to peek — this lets out heat and extends cooking time. Trust the process and keep the lid on. Another is cooking on high to save time, which can make the chicken tough and dry.

Stick to low and slow. Finally, don't skip dicing the onion finely; large chunks won't melt into the sauce and can be overwhelming. If the sauce seems thin at the end, let it sit uncovered for 10 minutes to thicken.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part, and when it shreds easily with a fork. After 6 hours on low, the thighs should be tender enough to pull apart with little resistance.

The sauce will have thickened and turned a deep mahogany color. If the chicken isn't fork-tender, cook for another 30 minutes and check again.

  • Poultry: 165°F (74°C) in the thickest part
