Tips for success
For the best texture, choose eggplants that are firm and heavy for their size. Avoid any with soft spots or wrinkled skin.
If you have time, salt the eggplant slices and let them sit for 30 minutes before stuffing to draw out excess moisture, but this is not necessary with this baking method. The parchment paper creates a steamy environment that keeps the eggplant moist and tender.
The sauce is intentionally light so it can soak into the eggplant. If you want a more intense tomato flavor, you can add an extra tablespoon of tomato paste. For a touch of sweetness, stir in a teaspoon of sugar or honey.
The dish is forgiving — you can add more or less red pepper flakes depending on your heat preference. Always taste the meat mixture before stuffing to adjust seasoning.
Variations
- Lamb and Mint: Substitute ground lamb for the beef and add 2 tablespoons chopped fresh mint to the meat mixture. Omit the red pepper flakes and use 1/2 teaspoon ground cumin instead. Serve with a dollop of yogurt mixed with garlic and lemon.
- Vegetarian Version: Replace the ground beef with 1 1/2 cups cooked lentils or a plant-based ground meat substitute. Add 1/2 cup finely chopped mushrooms to the filling for extra umami. Bake as directed, checking that the filling is hot throughout.
- Spicy Harissa: Add 1 tablespoon harissa paste to the tomato sauce along with the tomato paste. Increase the red pepper flakes to 1 1/2 teaspoons. Garnish with chopped cilantro before serving.
- Cheese-Topped: After baking, sprinkle 1/2 cup crumbled feta or shredded mozzarella over the top and return to the oven for 5 minutes, until melted. This adds a creamy, salty element that pairs well with the eggplant and beef.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. The sauce will thicken; add a splash of water when reheating.
- Freezer
- Freeze the baked casserole in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (180°C) oven for 15-20 minutes, or in the microwave in 1-minute intervals until hot. Add a little water or broth if the sauce is too thick.
Store leftover casserole in an airtight container in the refrigerator for up to 3 days. The eggplant will soften further upon reheating, but the flavor remains delicious.
To reheat, place individual portions in a microwave-safe dish and heat in 30-second intervals until warmed through, or reheat in a 350°F (180°C) oven for 10-15 minutes. The sauce may thicken; add a splash of water or broth if needed.
The stuffed eggplants can be assembled up to 24 hours in advance and kept covered in the refrigerator. When ready to bake, pour the sauce over and bake as directed, adding 5-10 minutes to the cooking time if starting from cold.
The sauce can also be made ahead and stored separately. This makes the dish perfect for entertaining, as the hands-on work can be done the day before.
Serving ideas
Serve the accordion eggplant kebab hot, with a generous spoonful of the pan sauce and a side of steamed jasmine rice. The rice absorbs the flavorful sauce and balances the richness of the meat. A simple green salad with a lemon vinaigrette would brighten the plate, and warm pita bread is a great option for scooping up every bit of the eggplant and sauce.
For a more substantial meal, add a dollop of plain yogurt or a sprinkle of fresh herbs like parsley or mint. The cool yogurt contrasts nicely with the warm spices. This dish is substantial enough to be a main course on its own, but it also works well as part of a larger spread. Leftovers can be repurposed as a filling for sandwiches or wraps the next day.

Accordion Eggplant Kebab Casserole with Spiced Beef

Ingredients
- 4 trimmed purple eggplants
- 400 g lean ground beef
- 1 grated onion
- 3 cloves minced garlic
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp red pepper flakes
- 1 tsp ground paprika
- 2 tomatoes, cut into wedges
- 2 green chilies, cut into strips
- 1 tbsp butter
- 1 tbsp tomato paste
- 1 cup hot water
- 1/2 tsp salt
- hot jasmine rice, for serving
Instructions
- Place two wooden chopsticks on either side of one eggplant. Using a sharp knife, cut crosswise slits 1 cm (about 1/2 inch) apart along the top, slicing down to the chopsticks without cutting all the way through. Repeat with the remaining eggplants. In a large bowl, combine the ground beef, grated onion, minced garlic, kosher salt, black pepper, red pepper flakes, and paprika. Mix with your hands until tacky and well combined.
- Gently spread open each eggplant slit and stuff a small portion of the spiced beef mixture into each groove. Press the meat gently into the slits so it stays in place. Arrange the stuffed eggplants in a rectangular glass casserole dish. Scatter the tomato wedges and green chili strips around and between the eggplants.
- In a small saucepan, melt the butter over medium heat. Add the tomato paste and stir for 1 minute until fragrant. Pour in the hot water and add the salt. Bring to a simmer and cook for 2 minutes, stirring occasionally. The sauce will be thin and reddish-orange.
- Ladle the hot tomato sauce evenly over the stuffed eggplants, making sure to cover the tops and the spaces between them. The sauce will pool in the bottom of the dish.
- Cover the casserole dish with parchment paper. Bake at 350°F (180°C) for 35 minutes, until the eggplants are tender and the meat is cooked through. To check the meat, insert an instant-read thermometer into the center of a stuffed slit; it should register at least 160°F (71°C).
- Remove the casserole from the oven and let it rest for 5 minutes. Using a spatula or tongs, carefully transfer one or two stuffed eggplants onto a serving plate. Serve hot with jasmine rice, spooning some of the pan sauce over the top.
