Before you start

Before starting, gather all ingredients and equipment. Warm the milk to about 110°F (43°C) — warm to the touch but not hot. Soften the cream cheese and butter for the frosting.

Grease a 9-inch round baking dish. Have the cinnamon sugar ready in a shallow bowl and the melted butter in another. Measure all ingredients accurately for best results.

Ingredients at a glance (13)
  • 1 1/2 cups warm milk
  • 100 ml vegetable oil
  • 1 large egg
  • 4 tbsp granulated sugar
  • 2 1/4 tsp active dry yeast
  • 3 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 4 tbsp unsalted butter, melted
  • 1/2 cup cinnamon sugar
  • 100 g cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 4 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

Prepare the Dough

  1. Make the Dough
In a large bowl, whisk the warm milk, oil, egg, sugar, and yeast. Let sit for 5 minutes until foamy. Add the flour and salt; stir until a soft dough forms. Turn out onto a lightly floured surface and knead for 2–3 minutes until smooth and elastic. Cover with a towel and let rest for 5 minutes.
Look for The dough should be soft, slightly sticky, and smooth after kneading.
Tip If the dough is too sticky, add a little more flour, a tablespoon at a time.
  2. Shape the Balls
Pinch off small pieces of dough and roll them into 1-inch balls. You should get about 24 balls. Dip each ball into the melted butter, then roll in cinnamon sugar to coat thoroughly.
Look for The balls should be evenly coated with cinnamon sugar and glistening.
Tip Keep your hands lightly oiled to prevent sticking.

The dough should be smooth, elastic, and slightly sticky. After resting, it will have puffed slightly.

The balls should be uniform in size and evenly coated with cinnamon sugar. Take a moment to check the color, texture and aroma before you move on to the next step.

Bake the Cluster

  1. Bake the Pull-Apart Cluster
Preheat the oven to 375°F (190°C). Arrange the coated dough balls in a single layer in a greased 9-inch round baking dish. Press the centers slightly to create a flat top. Bake for 15–18 minutes, until golden brown and puffed. The internal temperature of the dough should reach 190°F (88°C) to ensure the egg is fully cooked.
Look for The rolls should be golden brown and puffed, with caramelized edges.
Safe temperature 165°F (74°C) internal temperature (egg dishes)
Tip Check at 15 minutes; if the tops are browning too fast, cover loosely with foil.

The rolls should be golden brown, puffed, and caramelized on the edges. The kitchen will smell of cinnamon and butter. The tops should spring back when lightly pressed. Take a moment to check the color, texture and aroma before you move on to the next step.

Frost and Serve

  1. Make the Cream Cheese Frosting
While the rolls bake, whisk together the cream cheese, butter, powdered sugar, and vanilla in a small bowl until smooth and glossy. Set aside.
Look for The frosting should be thick, smooth, and ribbon-like when whisked.
Tip Use room-temperature cream cheese for a lump-free frosting.
  2. Frost and Serve
Remove the rolls from the oven and let cool for 5 minutes. Spread the cream cheese frosting generously over the warm rolls. Pull apart and serve immediately.
Look for The frosting should melt slightly over the warm rolls, creating a glossy glaze.
Tip Serve warm for the best pull-apart experience.

The frosting should be smooth and glossy. When spread over the warm rolls, it will melt slightly and create a beautiful glaze. Pull one roll away to see the soft, fluffy interior.

Common mistakes

One common mistake is using milk that is too hot, which kills the yeast and prevents rising. Another is overworking the dough, leading to tough rolls.

Be sure to coat the balls thoroughly in butter and cinnamon sugar, or they will be pale and less flavorful. Also, don't overbake — the rolls should be soft and moist, not dry.

How to tell it’s done

The rolls are done when they are golden brown on top and puffed up. The internal temperature of the dough should read at least 165°F (74°C) in the center, ensuring the egg is fully cooked.

If a toothpick inserted into a roll comes out clean, they are ready. The edges will be caramelized and slightly sticky.

  • Egg dishes: 160°F (71°C) in the thickest part
